Some sausages are smoked but not cooked. What are the benefits of smoking the sausages?!
Answers: It makes them taste good. Smoking by itself does not preserve meat as well as most people think, it is the "cure" mostly salt and/or drying that preserves. Smoking detered flies while the meat was drying.

When they are smoked they are usually fully cooked....The smoking process is a cooking process....It,s cooking with wood to give them the smoked flavor...I have never seen a sausage that has been truely smoked not cooked...The raw ones you are refering to have smoke flavor as an additive!!!!
smoked means cured by heat and smoke.. they are edible as they are .. just heat and eat.. smoking is done with a hot fire and a tremendous amout of hot concetrated smoke.. it is done slowly but it is very effective.. during pioneering days.. that was the only way they had of preserving meat.. clean it, and purify it with salt.. or smoke.. it is good.. enjoy
