How to make the best Champ??!


Question: I made beautiful champ last night for the inlaws and it went down a treat.

Spuds peeled and boiled
4 Scallions (spring onions) chopped
200g Butter
Dash of milk
Salt

Chop the scallions and add to the butter and milk and simmer gently to let the flavours infuse. Add to boiled spuds then mash to a creamy consistancy and season with salt to taste.

2 lbs boiling potatoes, peeled and cut into 2 inch pieces
1/2 cup milk or light cream or half-and-half
6 tablespoons butter
1 1/3 cups chopped fresh scallions or fresh chives
salt and pepper

Cook the potatoes in boiling water until tender,12 to 15 minutes. Drain and mash.
Meanwhile,in a medium saucepan,combine milk and 4 Tbsp of the buter. Heat until butter melts.
Add chives or scallions,reduce heat to a simmer and cook for 4 minutes or until scallions are soft.
Add potatoes, salt and pepper to the milk mixture and stir until blended.
To serve, spoon the champ into a deep bowl,make a well in the center and top with remaining butter.

my granny used to make similar to your recipe but also added a raw egg to the mix. dont know if its safe to do so these days.

I boil my peeled potatoes and drain.
I first mash the potatoes with butter then I add some sour cream, salt and white pepper. If they need to be thinned a bit I add warmed milk a bit at a time with chopped Green onions

When you boil your potatoes, add some diced garlic to the water. When they are fork tender, drain and put back into the pan. (It helps dry out the potatoes) Drop in some butter and stir for a second to coat the bottom of the pan, (helps to stop sticking to the hot pan) and then add some sour cream, shredded cheddar, and milk. Whip it to a creamy consistancy and if you think it needs salt or pepper do it now.
