KIELBASA BAKE

Sort of a Polish version of a New England Boiled Dinner (but it's baked!).

2 lbs. Kielbasa (Polish sausage)
8-10 sm. potatoes (as big as lg. egg)
6 carrots
1 lg. can sauerkraut
1 sm. onion
2 tsp. granulated brown sugar
1 c. apple juice

Spray a large baking dish with non-stick spray. Drain and rinse the sauerkraut; spread evenly over the bottom of the pan. Slice the sausage into 2 inch chunks then halve lengthwise. Arrange the sausage skin side up on the sauerkraut.
Scrub (do not peel) the potatoes, halve them lengthwise and place them skin side up over the sauerkraut. Slice the carrots; add them to the dish. Sprinkle the onion very thinly sliced over all.

Dissolve the sugar in the apple juice; pour over the entire dish. Cover tightly; bake in a 325 degree oven for one hour.

It's done when the potatoes and carrots are tender. Serve with fresh rye bread. A great rainy day dinner! Easily serves four hungry people.

BARBECUE KIELBASA

Sorry, but it's alrerady 2;40 am in the morning here (Thailand).

I'm all for quick and easy. So I would do a Sausage Stir Fry. There's the Stir Fry ready mix in the frozen isles. Or sausage and white rice and veggies.

There is also a Jambalaya Mix you can get and add sausage, shrimp, chicken (considering you already have some chicken made). And the shrimp you can also find cooked in frozen sect. That's also quick and easy.

Sorry, no fancy recipes but hey if he doesn't care.....why not save time? Good luck!

Cook your sausage. While baking (or however you cook it) saute onion and mushrooms, and garlic in a big pot. Add in tomatoes once onion is done, and salt and pepper(cajun seasoning too can give it a nice kick). Pour in water and white rice. Cook until rice is done. Stir and add sliced sausage. Add any seasonings if you need.

Simple....fried potatoes and pork and beans.

Make it really simple with mashed potatoes and some green beans.

One pot wonder - Just cook it and add it to some macaroni and cheese and bake with some crunched up Ritz crackers on top.

Sometimes I add kielbasa to my spaghetti sauce.
It gives spaghetti a different but great flavor.

Or try this, its a family favorite.
Use Vigo Red beans and rice, use as a side dish with kielbasa or
I use two packages cook according to directions and add sliced kielbasa (14oz)
to the rice mix and cook for 25 minutes.
Serves 8
If you cant find Vigo brand the Mahatma brand will work.

This casserole is absolutely delicious. Instead of the link sausages, I use kielbasa.
