Potatoe salad question?!
Answers: okay, so last year for thankggiving i attempted to make potatoe salad, i know how to do it cause i watched my dad make it for years, i just cant boil them right. Last year they came out too hard, i dont remember how long i boiled them, i just remmeber my dad said to boil it till a fork can go halfway thru with no problem.. but they still came out hard.. ne suggestion?
If they are too hard, you didn't cook them long enough. Boiling times depend on how many potatoes and how much water. Normally, sticking the fork in does the trick. But you shouldn't have to force the fork and when you put the fork in, the potatoe might crumble. I would bring water to boil with potatoes, boil for about 15-20 minutes, turn off burner, cover pot and let soak for 15 minutes. After they cool or are cooled with water, you should be able to easilty peel with just your fingers.

Are you boiling the potatoes whoe? I like to cube mine up before boiling them then I boil for about 10-15 .
Boil potatoes for 20 mins. prod the fork in and make sure it can pierce it with ease.

stick a fork ALL the way through on the biggest potato, it should go through easily bt depending on how many potatoes youve got and the size of the pan itll make a difference as to how quick they cook. afterwards i always dice them, put in some parsley (lots!) and mayo (mebbe some spring onions too!!) ooh ur making me hungry now!!
Boil them for longer. A waxy potato is best for salads but if you need to use a maincrop potato then boil them with the skins on then peel afterwards - this will help them hold together until they are cooked all the way through.
Your Dad is right - it is called fork tender, sample a peice then you will know for sure - don't over cook you will have mush.

It does depend on the variety of potato you are using. I suspect you are in the US and have different varieties from those we have in the UK. Here, I would only use new potatoes like Charlotte or Maris Peer. It would be a good idea for you to do some research into the varieties you have and which are the most suitable for making into a potato salad.
Cut them into cubes (as evenly sized as possible) and set them to boiling. Start checking them with a fork after they boil for 10 minutes. I do this by fishing one out and setting on the counter. Then I set the tines of the fork on it, and if the weight of the fork alone is enough to sink the tines half way through the cube, they are done enough for potato salad. If it goes all the way through, you'll be making mashed potatoes.

INGREDIENTS
1278 g potatoes
1 small onion, finely chopped
125 g celery, chopped
6 g salt
6 hard-cooked eggs, diced
2 eggs, beaten
100 g white sugar
3 g cornstarch
salt to taste
120 ml vinegar
140 g evaporated milk
5 ml prepared yellow mustard
55 g butter
235 ml mayonnaise
DIRECTIONS
Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook for about 20 minutes, or until easily pierced with a fork. Drain. Cool, peel and dice. Transfer to a large bowl, and toss with the onion, celery, 1 teaspoon of salt, and hard-cooked eggs.
While the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan. Stir in the vinegar, milk, and mustard. Cook over medium heat, stirring frequently, until thickened, about 10 minutes. Remove from heat, and stir in the butter. Refrigerate until cool, then stir in the mayonnaise.
Stir the dressing into the bowl of potato salad gently until evenly coated. Chill several hours or overnight before serving for best flavor.
Hard-cooked eggs
Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, and peel
I cut my potatoes into four and when they begin to boil, I let them boil for 20 minutes...they turn out alright.
boil them a bit longer n make sure they're well cooked before taking the pan off the heat. good luck this time
