Does anyone have any good recipes for leeks? I have some I would like to cook tonight but not sure how?!


Question: PORK LOIN WITH LEEKS & WHITE WINE

1/2 tsp. garlic powder
1 (4 lb.) boneless pork loin, tied
3 lg. leeks (white & pale green part), sliced
6 shallots, finely chopped
2 c. dry white wine or vermouth
1 c. stock (chicken, pork or veal)
4 tbsp. Dijon mustard
Salt & pepper

Rub pork loin with garlic powder, salt and pepper. Roast in a 350 degree oven for one hour. Sprinkle leeks and shallots around roast. Continue roasting one hour more or until 170 degrees on meat thermometer.
Remove roast from pan and keep warm on platter.

Add white wine to roasting pan and broil briskly until reduced by half. Add stock and whisk in mustard. Turn heat to low to keep warm.

To Serve: Slice roast and spoon leek sauce over meat. Serve with mashed or roasted potatoes. Makes six servings.

Baked Potato & Leek Soup with Cheddar & Bacon Recipe
2 medium russet potatoes (about 1/2 pound each)
4 Tablespoons unsalted butter
2 medium leeks (white and light green parts), sliced and rinsed well
2 medium cloves garlic, minced
Kosher salt and freshly ground black pepper
2 cups homemade or low-salt canned chicken broth
4 thick slices bacon, cut into 1/2-inch dice
1/2 cup milk
1/2 cup sour cream
1 cup (about 1/4 pound) grated sharp Cheddar (see Cook's Note)
2 Tablespoons thinly sliced scallion greens or chives
PREPARATION:
Heat the oven to 375 degrees F. Scrub the potatoes, pat dry, and pierce several times with a fork. Set them directly on the oven rack and bake until very tender, about 1 hour. Let cool completely on a cooling rack.

Melt the butter in a soup pot over medium-low heat. Add the leeks and garlic, season with salt, and cook, stirring occasionally, until softened, about 10 minutes. Add the chicken broth and 2 cups water. Simmer until the leeks are very tender, about 20 minutes.

Meanwhile, cook the bacon over medium heat, stirring occasionally, until browned and crisp. Transfer to a paper-towel lined plate to drain.

Cut one of cooled potatoes in half lengthwise and scoop the flesh out in one piece from each half. Cut the flesh into 1/2-inch cubes and set aside. Coarsely chop the potato skin and the entire remaining potato and add to the pot with the leeks. Puree the contents of the pot in batches in a blender until very smooth. Return the soup to a clean pot and reheat over medium low. Whisk together the milk and sour cream and then whisk this into the soup, along with 1/2 cup of the Cheddar cheese. Stir in the diced potato. Season with salt and pepper. Serve garnished with the remaining Cheddar cheese, the bacon bits, and the scallions or chives.

we have braised leeks when we have braising steak just pop them in the gravy the steak is cooking in 20 mins before the steak is done.lovely, chop them into small pieces 1 inch wide or whatever size you want.gives a great taste

Chop leeks in half ........... only use the white bits ........ part boil for 10 mins ........... wrap leeks in parma ham or bacon .... put into a casserole dish and cover with a cheese sauce. cover with breadcrumbs and bake in a hot oven till brown and crispy.. yum yum xxxxx

Most any recipe for onions can be adapted to Leeks but there is three things you must remember about Leeks. They look like green onions on steroids so be very careful about cleaning between the layers after harvesting. the soil hides between them and its best to really make sure they aer thoroughly clean before you cook and eat a biteful of soil.
2 Leeks have a great flavour so try them in your favourite vichyssoise recipe where they rock. remember Vichyssoise is traditionaly served chilled Its a potato and onion with leek soup
3 try all the leek recipes you come across because there is nothing like them
