Looking for some help to find the name of this Coconut Company?!


Question: I bought an off brand coconut in a blue and white bag from Big Lots. I went back there to get some more and it's all sold :(
There is a recipe on the back that I would like to make again.
I don't know the name so was hoping someone could help me.

You might want to call Big Lots and just tell them what you just said. Since Big Lots deals in overstocked items from other stores, it would be very difficult for an outsider to find out what coconuts that store carried. Of course if you're very lucky someone else in your area bought one and remembers the name. That'd be great! =)

That site has LOTS of recipes for coconut and pecan bars..

I'm not sure of the brand name but you might check with Big Lots and see if they can be of any help to you. Angel Flake and Bakers are two popular brands. Depending on what you are trying to make you might search on-line and find the recipe.

Maybe if you let us know what the recipe was or give us an idea close to what it was, we can help you with the recipe. Often recipes are shared with other brands of coconut.

Chocolate Coconut Pecan Squares

Prep: 15 min - Total: 1 hr 30 min

3/4 cup (1-1/2 sticks) margarine or butter, divided
3/4 cup sugar, divided
1-1/4 cups flour
2 Tbsp. whipping cream
1-3/4 cups Pecans, coarsely chopped
1 cup Coconut
4 squares Semi-Sweet Baking Chocolate, coarsely chopped

BEAT 1/2 cup margarine and 1/4 cup sugar in bowl with electric mixer until creamy. Blend in flour until dough forms. Press on bottom of ungreased 9-inch square baking pan. Bake at 350°F for 18 to 20 minutes or until edges are lightly browned.

HEAT 1/2 cup sugar, 1/4 cup margarine and cream in saucepan, stirring until margarine melts and mixture is blended. Stir in pecans; set aside.

SPRINKLE coconut and chocolate evenly over crust. Top with pecan mixture, spreading evenly. Bake an additional 20 to 25 minutes or until golden. Cool completely; cut into squares.

Makes 16 squares, 1 square per serving

If using glass bakeware, reduce oven temperature by 25°F.
