Shredded cheese, sour cream with chives, and bits of bacon. It's fattening, but delicious.

I like adding roasted garlic. Just smear a little olive oil on a whole head of garlic, wrap it in foil, and bake in the oven at 350 deg. for about an hour. Carefully unwrap and just squeeze out the cloves of garlic. They will be soft and pop right out of the husks and it gives the garlic a sweeter more mellow taste. Mash them up and add to the potatoes just before you start to mash them. Yummmmmo!

One great thing I love to add to mashers is Celery Root, all you do is substitute some of the root for some of the potatos. Celery root or celeriac can usually be found at the grocery store, Just peel off the outer skin, this can be tough, cut into cubes the same size as your potatos and proceed as you usually do. Other great add ins are roasted garlic, sauteed onions, green oinions, even wasabi

- i usually mash 1 to 1 white potato with a sweet potato.
- my sister-in-law adds in a little white horseradish to her mashed potatoes.
- once in awhile i'll add in 2 or 3 slices of white American cheese to my (regular) mashed potatoes.

Shredded cheese! Mmmm I add pretty much the same as you mince the bacon and adding the cheese when I do twice baked potatoes. It turns out deliscious. As another poster said, roasted garlic is awesome as well.

Actually you can add anything that you like to mashed potatoes, but we use butter and then milk to mash them, then we sometimes add fresh chopped green onion stems, or some chopped chives, which are a bit like onions, or even chopped whole onion. We think onion added is the best flavour.
Bacon bits are nice to add, and finely chopped nuts like almonds give it a nice flavour too. Bits of cheddar cheese or blue cheese, if you like it, is a great addition!

A sandwich paste gives a nice texture and flavour when adding to the mashing process. I like using chicken paste.
