Are canned beans already cooked?!


Question: Are the beans in a can just as hard as the ones sold in a bag? Which are better for slow cookers? I just bought one and haven't tried any recipes yet.

All canned food is blanched prior to canning and pressure cooked in the can.

One of the last processes prior canning is that the fresh food is hit with jets of boiling water as it travels along the conveyor belts towards the canning stage.

Then, once it is in the can a brine (salt water) mix is usually added (these days there are other alternatives, but most canned products have some form of preservative and salt is the most common).

The lid is put on the can and hundreds of cans are put in big 'baskets' which are then put into huge pressure cookers before going off for labelling.

This way, the food is hygenic, a preservative is in place to avoid spoiling and it is ready to use.

Most canned food can be eaten straight from the can due to the preparation process, although it would not be palatable in some cases.

I would think that in a slow cooking process, fresh foods may keep their shape and texture longer. Canned foods would tend to break down into a 'mush' sooner. But if you are cooking a stew or similar, that would not matter.

It is probably up to the individual preference.

Yes, they are cooked. I like to use dry beans, that have been soaked overnight. You will love your crock pot.

The beans in the bag are better for longer cooking methods but i recommend soaking them first its better also to pick through the beans before you cook them.

NEW ENGLAND BAKED BEANS MADE IN A
CROCK POT

1 lb. dry navy beans

Wash and pick over beans, removing any stones, broken beans, etc.
In a saucepan, cover beans with water (about 1 inch above top of beans). Simmer beans for 10 minutes. Let cool 5 minutes.

Transfer to CrockPot, along with water they were cooked in. Cover and leave to soak overnight.

The next day add:


1 cup brown sugar, packed
1 additional cup water (if beans are dry)
4 tsp. dry mustard
4 tbsp. molasses
2 tablespoons ketchup (optional)
1 tsp. salt (or to taste)
1 large onion, sliced
onion powder, to taste (optional)
1/4-1/2 lb. salt pork

Mix ingredients (except for salt pork) and stir into beans. Slash salt pork in 1/2 inch slices nearly up to the rind, but not all the way through. Cut across the previous slices until the salt pork is deeply scored. Submerge salt pork in beans. A slice of hickory smoked bacon can be placed over the top of the beans.

Turn CrockPot on low setting. Cover and cook for 6 hours, or until beans are tender. If beans start to become dry during cooking, add a small amount of hot water.

When beans are tender, taste and adjust seasonings before serving. Slice up bits of the pork to add to each serving.

Traditionally, the cooking is begun on a Saturday night. Baked beans make for a leisurely Sunday lunch and can be served with good quality natural casing frankfurts or kielbasa.

YUP , MOST SAY-HEAT AND SERVE, IF YOU NEED TO AD TO A RECIPE, THEN OMIT THE COOKING TIME AND THEN ADD TO-MEAL ,PORK AND BEANS ARE MY FAV.!!!

all canned vegetables are precooked.
In answer to your other question, dried and reconstituted beans are always a better choice than canned, for a novice like yourself, get started for a year or so with canned. They're decent too - but after a while get into dried. That's where the fun is!

INGREDIENTS

* 1 pound dry great Northern beans
* 8 cups water
* 4 ounces diced salt pork
* 1 cup chopped onion
* 1/2 cup molasses
* 1/3 cup packed brown sugar
* 1 teaspoon dry mustard
* 1/8 teaspoon ground black pepper

DIRECTIONS

1. The night before, combine the Great Northern Beans and water in a large saucepan. Bring to a boil, and cook for 1 1/2 hours. Pour beans and their liquid into a bowl, cover and refrigerate overnight.

2. In the morning, drain off liquid, reserving 1 cup. Pour beans and the reserved liquid into the crock of a slow cooker. Stir in the salt pork, onion, molasses, brown sugar, mustard and pepper. Cover, and cook on Low for 12 to 14 hours. Stir before serving.

Slow Cooker Bean Casserole AKA Sweet Chili

INGREDIENTS

* 1/2 cup ketchup
* 1/4 cup molasses
* 1 teaspoon dry mustard
* 1 (16 ounce) can baked beans with pork
* 1 teaspoon salt
* 1/2 teaspoon ground black pepper
* 4 slices bacon
* 1 large green bell pepper, chopped
* 1 1/2 pounds ground beef

DIRECTIONS

1. In a slow cooker, mix together ketchup, molasses, mustard, pork and beans, salt, and pepper.

2. Cook bacon and bell pepper in a large skillet over medium heat for about 5 to 7 minutes, then add to the slow cooker. In same skillet, brown beef, and stir into the slow cooker.

3. Cover, and cook on High setting for 1 hour.

READY IN 10 Hrs 20 Min


INGREDIENTS

* 3 cups dry navy beans, soaked overnight or boiled for one hour
* 1 1/2 cups ketchup
* 1 1/2 cups water
* 1/4 cup molasses
* 1 large onion, chopped
* 1 tablespoon dry mustard
* 1 tablespoon salt
* 6 slices thick cut bacon, cut into 1 inch pieces
* 1 cup brown sugar

DIRECTIONS

1. Drain soaking liquid from beans, and place them in a Slow Cooker.

2. Stir ketchup, water, molasses, onion, mustard, salt, bacon, and brown sugar into the beans until well mixed.

3. Cover, and cook on LOW for 8 to 10 hours, stirring occasionally if possible, though not necessary.

Yes they are already cooked, the only reason that people sometimes "cook" them is to simply heat it up to put on other foods. If you want to try some cool recipes with your slow cooker, you should check out www.bettycrocker.com. Also if you want to make something with beans, you can either get the bag version, uncooked....or cooked....the only thing is sometimes putting cans of beans in a slow cooker and the duration you cook it for whatever foods is with it...the beans can get sort of sloppy. Think what happens to cereal when you've left it with the milk too long.......:D

Canned beans are cooked. Dried soaked overnight beans are best for long cooked slow cooker recipes 8-10 hrs Shorter recipes may use canned beans . If you substitute canned for dried beans they are likely to loose consistency or fall apart.Most recipes specify at least the ones i use.
