What are some recipes I can make and then freeze into single portions and reheat later that are very healthy?!
Answers: I dont have a lot of time and I get a short lunch break at work. But I need to stop getting fast food and eat healthier!!
You can freeze many foods with success but you need to make a list of your favorite foods and then search freezer sites for instructions on freezing. I've been doing this a while but found that not everything reheats as well as fresh cooked foods. Like Eggs, Potatoes unless a bit of fat is used, and milk products do not freeze well.
What works for me is to make extra dinner servings and then save them in compartment dishes, freeze at 0*F and seal them with zipper lock bags to keep out freezer burn. Many "Make Ahead Food sites" list how long you can freeze foods and still keep them safe to eat. The sites also tell you how to reheat your food too.
Look for web sites with words like: Freezing meals, once a month cooking(OAMC) or Make Ahead Meals. There a lot of sites out there and lots of help.
Soups, Casseroles, side dishes freeze well and are easy to use as lunch or dinner. I'll post some sites for you to see that will help you get started. You don't need a lot of time to prepare your lunches. Start by making extra dinner servings and go from there. Be sure to look up freezer safety since you will need to chill foods that are hot before you freeze them.
