Question: what do i do with the extra grease after i cook? i liveon a military base where i cannot just throw it anywhere. is it safe to throw it in my garbage ??

I keep my bacon fat in a covered container in my frig and then use it to season other dishes - eggs, hash browns, beans, etc. The other fats can just be put in a metal can - they will solidify when back to room temp. If you mean oils from frying, I put them in larger cans with lids and then dispose in the trash. Yes, it's safe to throw in your garbage, but less messy if you put them in a container first.

I use a tuna fish can because they're shorter for my beef fats and when the can is full, I put it out like suet for the birds.

place in old coffee cans, old jars, anything with a lid, then throw in trash.

Pour the hot grease into any metal disposable container (old soup can, etc). Let the grease harden/solidify and you can then throw it into the garbage.

What katlady and deb said is fine. But I wanted to add that sometimes keeping a little aside is a good idea too, in these specific cases:

I always keep a small jar of bacon rendering in the fridge and use it for sauteing veg when I make beef soup from scratch, or good for browning beef for many recipes that start by browning the beef followed by slow cooking.

Duck fat is also quite useful particularly if you do any french cooking. (Cassoulet for example.)
