Low fat substitution for heavy cream?!


Question: I am trying to make something very similar to penne ala vodka and I really trying to cut down the fat - I have heard of substitution from soy yogurt to cottage cheese with evaporated milk to skim milk with flour and a million other things - I don't know which one would taste the closest to heavy cream for this recipe. Any advice (except half and half) would help

Here is the best substitute I've used; after trying several ideas.

8 ounces cottage cheese
3 tablespoons powdered skim milk


Combine these ingredients in blender and puree 5 minutes.

HUmmm... It never occurred to me until just now as I always have powdered milk available. I bet you could use powdered coffee creamer such as Creamora or a light version. I use powdered creamer in my hot cocoa mix so it should work fine.

They have a fat free half & half....that is probably your next best option. I've used it...it isn't half bad...no pun intended

I haven't tried the cottage cheese thing, but everything I have tried has not worked very well.
I love to make vodka sauce, and really, I have switched to light cream, but even half and half will curdle and look terrible. Milk with flour in it curdles and looks gross.
I have decided to just use the cream (light), and live with it. A little fat won't kill you.

what about creme freche? I dont know do you get that where you are but thats what I used to use - I would use the low fat one,
also soy creme isnt half bad but its sweet so wont work I dont think unless you can find an unsweetened one?
