In cooking, what does "Mark" mean?!


Question: I have a Welsh recipe, and in the recipe the directions say,

"Begin at 425-450/F, Mark 7 or 8, and reduce to 400/F. or Mark 6 after 30 minutes."

What does "mark" mean?

What does "mark" mean?

It means the gas mark. On a gas stove there are gas marks (1,2,3, etc) instead of "degrees" like on an electric stove. A lot of older recipes will just mention the gas mark and not the temperature, but this one gave you both so you could use whichever one was the most convenient for you.

What is it your making? I sounds like slotting with a knife, if its a crust of some sort, but more information on what your making would be helpful.

Mark means making a visible impression on the food, weather it is cutting the food or making something.

Some cookers instead of being marked by temp. e.g.180 degrees Celsius they are marked in numbers 1,2,3... 2 being hotter than 1. But if your cooker is marked in temp. then don't worry.
