Frosting recipes?!
Answers: I'm making cupcakes....white cake...anyone have any ideas/recipes for the frosting. Something yummy! Thanks...
This is the buttercream recipe I always use. Very yummy and stays soft.
2 pounds sifted powdered sugar
2 cups softened butter
2 cups solid vegetable shortening
2 tablespoons clear vanilla extract
1/4 teaspoon almond extract
optional: 2 tablespoons of meringue powder
Directions
Cream the butter and shortening until smooth. Add powdered sugar and vanilla. Beat until smooth. Do not over mix or beat on high speed.
Fudge Frosting:
8oz baking chocolate - melted
In blender, add 1 can (the bigger one - 10oz I think) of evaporated milk (I use the skim one) and 2 cups of sugar. Blend on low until sugar is mixed into the milk. Slowly add melted chocolate. Pour into bowl and let sit on counter UNCOVERED for 30 minutes. Cover and let sit for another hour. It will be ready at this point and like a thick pudding. After you frost the cupcake, put them in fridge and the icing will get fudge like and a little shiny.
HINT: Make this frosting and put it on the counter, make the cupcake batter and put into pan - this usually takes me about 30 minutes. Cover frosting and pop cupcakes in oven. When the cupcakes are done, take them out to cool. This will pretty much eat up that hour. So the frosting and the cupcakes will be ready about the same time.
There will be leftover frosting. put it in fridge. Heated in microwave makes an awesome ice cream topping. If you want to use it as a frosting again - make sure it is at room temperature before you attempt to do that since it will set up like a soft fudge in the fridge.
