Rice is your best option. Spanish rice or even butter and garlic rice would work. Chicken broccoli rice? Plain white rice would work too.

spanish rice is a good choice. Also a nice salad and possibly green beans ( I like to use fresh green beans sauteed with a little butter and garlic)

Rice and beans/with cheese, salsa with chips, flan for dessert. You can serve a salad with pico gallo and Guacamole

Normally with anything mexican I'd go with a spicy black bean or queso dip and a ricey-beany side, but I think that would overpower the delicate flavors of your seafood enchiladas.

I'd start with a hot artichoke dip and tortilla chips for an appetizer--equal measurements mayo and parmesan cheese and a can of artichoke hearts, choppped up. Put in a pretty oven-proof dish (I use a pie plate) and bake at 350*F until hot and bubbly. It doesn't really have an italian-y taste; I find it blends with whatever is being served. You can substitute chopped cooked spinach for the artichokes if you prefer, or do half and half. A sprinkling of diced pimento might give it a little extra color.

Mexican-Style Spicy Caesar Salad



A bit of spice to your caesar...


1 head of romaine lettuce, chopped
1 ? cups creamy Caesar salad dressing
1 medium jalape?o pepper, quartered (seeds removed)
1 Tbs fresh lime juice
2/3 cup shredded Parmesan cheese
croutons

Place Caesar dressing, jalapeno and lime juice in a blender and process until smooth. Chill until ready to serve.
In large bowl, mix romaine and Parmesan. Drizzle with dressing and toss until desired coating. Sprinkle with croutons.
Serves 8

How about a Mango Salsa with blue corn tortilla chips?

Mango Salsa

INGREDIENTS:
1 cup diced fresh mango
1/3 cup roasted red peppers, drained & diced
1/3 cup diced red onion
1 jalapeno pepper, seeded, minced
2 tablespoons fresh mint, chopped
1 tablespoon fresh lime juice
PREPARATION:
Combine all ingredients and chill.
Makes 1 1/2 cups of mango salsa.

I am from south Louisiana, I would serve a seafood effete or a seafood jambalaya
