Hush Puppies II

INGREDIENTS

* 2 quarts vegetable oil for frying
* 1 (15 ounce) can creamed corn
* 2 eggs, beaten
* 1 tablespoon minced onion
* 2 cups self-rising flour
* 1 teaspoon seasoning salt

DIRECTIONS

1. In a deep fryer, heat 1 inch of fat or oil to 365 degrees F (185 degrees C).

2. In a medium mixing bowl combine all other ingredients, blend well and let stand for 10 minutes.

3. Use a serving spoon to scoop up tablespoon size pieces of batter and gently drop them into the oil. Rise the spoon as needed to keep the batter from sticking.
4. Cook the hushpuppies, 8 or 10 at a time, until brown. Remove from the oil with a slotted spoon and roll on paper towels to briefly drain. Serve hot.

1 cup self-rising flour
1 cup cornmeal
1/8 teaspoon salt
1/4 teaspoon baking soda
1 egg
1 1/2 cups buttermilk -- or as needed
1 medium onion -- chopped (optional)
fat -- for deep frying (or you can use a vegetable/canola blend

Sift together flour, cornmeal, salt, and soda. Add egg and buttermilk until it's the right consistency to hold its shape when rolled into a ball. Mix in onion, then roll into balls about 1 to 2 inches across and drop in deep hot fat. Fry until they're brown and crispy. Let them drain a bit on some paper and serve hot.

3/4 cup corn meal
1/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1 egg
2 teaspoons bacon drippings, melted
1/3 cup finely chopped onion
Crisco or other vegetable shortening for frying
Combine all the ingredients together in a large bowl, and mix well.

Melt enough shortening in a skillet or deep fryer to completely cover the hush puppies. Heat to a temperature of 375°F. Drop batter by spoonfuls (approximately 1-1/2 inches in diameter), a few at a time, into the hot oil and deep fry until crisp and golden brown, 2 to 3 minutes.

Drain on paper towels, and serve at once. Makes about a dozen.

Aunt Jemima Corn Bread mix (Buttermilk)
Depending on how many you want to make add to this in a bowl, milk or heavy cream (your choice) 1 chopped onion, cooking oil and garlic powder (just a pinch or two), eggs (beaten)

Mix all of this together well and spoon the cornbread mixture by heaping teaspoonfuls in hot cooking oil.

Fry to a golden brown.
