Question: When do you know a baked cheesecake is done?

Can I use the toothpick trick and see if it comes out clean? Or something else?

A toothpick probably will not come out clean even if the cheesecake is done. The best thing to do is bake it the specified time and then test it by gently wiggling the pan. The cheesecake should wiggle slightly if it is done. If it seems too sloshy or liquidy, cook it a little bit longer. A cheesecake will firm up as it cools, so it should be just slightly jiggly when the timer goes off.

My mom just trusts the timer. She doesn't even open the oven door until the cheesecake has completely cooled.

I would wait until the edges get golden.
