Any good fritata recipes or a simple quiche?!


Question: Yes, I make them without a recipe....I learned at a 4star restaurant when I worked there as a kid.

Put the crust in a 9" piepan, and put that on a level cookie sheet. Lightly pre-cook your piecrust.

Take it out of the oven, and while still hot, put in about 1.5 cups of grated cheese, and 1/4 cup chopped lightly sauteed onions in the bottom of the crust. The cheese will melt. That's okay.

When cool, add about 1 cup of a vegetable...blanched broccoli, fried potato wedges, or chopped steamed squeezed spinach is good.

Mix 6 eggs, 3T flour, 1/2 tsp dry mustard, 1 cup milk, 1 tsp salt, a pinch of black pepper and nutmeg. Beat well.

Pour this over the pie crust. Carefully put it in a 375 oven for about one hour, or til almost set in the center.

yes

fritatta is one of those recipes where you can put anything you like in it. For example zucchini, pinenuts, bacon; mushroom, parsley and bacon; mixture of veges; chicken and spinach; add herbs spices, garlic, parmesan cheese etc I don't think you could make a "bad" fritatta it's so easy

this is really easy

You need:
1 teaspoon vegetable oil
1 medium onion, sliced
500g sweet potato, peeled and thinly sliced
1/4 cup water
420g can sweet corn kernels (or 1 corn cob, cooked)
2 cups broccoli, cut into florets
60g grated reduced-fat cheddar (or 30g grated Parmesan cheese)
6 eggs
1/2 cup low-fat milk

Method:
Preheat oven to 180°C and grease a 20cm square baking tin with oil.

Combine onion, sweet potato and water in a large bowl, cover with cling film
and microwave on HIGH (100%) for 3 minutes.

Add broccoli and microwave on HIGH (100%) for a further 2 minutes. Layer baking tin with half the sweet potato and top with corn, broccoli, onion and remaining sweet potato.

Whisk eggs and milk, pour over vegetables, top with cheese and bake for 30 minutes or until firm in the centre.
