A simple casserole is soup! Mushroom soup and can sliced mushrooms over (cover slightly) boneles pork chops seasoned(salt& pepper) with sliced potatoes on one end of pan (caserole dish) top with a little parmesan cheese.. bake in pre-heated oven 350 degrees for 30 minute check ocasionally with a toothpick to see if pork chops done?? the fluid will cook away if too long..tasty go for company?? in-laws???

I have a few standby's that go over really well with just about everyone.

First, a basic simple sauce. Sautee up 2 - 3 cloves of garlic and 1/2 an onion you have diced in olive oil and salt and pepper. You just want them soft, not brown. I like to deglaze my pan with a little white wine, maybe a 1/4 c. Let this simmer for about 2 minutes, then add 2 cans of diced tomatoes. Let this simmer for about 25 minutes. Once you add the tomates add a little more s & p. You can simply toss some in some pasta, parm cheese and fresh ripped basil. If I am trying to impress someone about 10 minutes before you are about to serve it throw in some fish/seafood. It's really good. Depending on who I am feeding I use a firm white fish, shrimp and clams. Pour this over a large bowl of linguini with the fresh basil again. It looks really dramatic.

With this pasta I also serve chicken parm. Well, an easy and lighter chicken parm. I pound out boneless skinless chicken breast until they are about 1/2 inch thick all around. Then toss it in some seasoned flour, egg and a mixture of equal parts parm cheese and bread crumbs. Sautee in olive oil medium heat for about 5 minutes per side.

Another thing I do with this sauce is sautee up sausage, pepper and onioins then add some of the sauce to it. Then hollow out crusty rolls, toast them lightly, add the mix, top with a litlle ricotta and moss cheese and put the top back on. Pop it back in a 400 oven for about 10 minutes. You really do have to toast the bread first. Also, cut it closer to the top.

I do a lot with this sauce obviously, but it can go anywhere. I also make a creamy soup with this. In a sautee pan add equal parts of butter and flour. I generally use about 2 tbsp. each. Then add 1 quart of chicken stock, a sprig of thyme, and a bay leaf. Let this simmer down until you have basically a really thick gravy on a low heat you are looking at about 25 minutes. Add a ladleful or two of your tomato mixture, let this simmer for about 10 minutes. Then turn off the heat and add a small container of cream. I prefer half & half.

You can easily double or triple this recipe, I do that, and freeze it. Then you have it ready on your nights to cook.
