Oh yeah, one more thing - husband is glueton intollerant, so I can't really make pasta dishes easily. We use the rice pasta, but it's not the same!!

Oops! No pb pancakes, stuffed pork chops, spaghetti, frozen pizzas, tacos, etc. & I'd be careful with creamed soups... they might be thickened with flour... GLUTEN INTOLLERANT, remember?!! :)
But pork chops are definitely a good choice, either on the grill, or browned, liquids added, covered and simmered till falling apart tender.
season chops with s&p, garlic powder (never garlic salt!). In large fry pan, brown pork chops well. Slice up a medium onion and put over chops. Add about 1/2 cup orange juice (depending on how large a batch you're, and a little water making) Almost but don't quite cover chops with liquid. Sprinkle paprika over onions. Cover and simmer on low heat until done (about 45 mins). Check for tenderness. They will be VERY tender when done. This is a great meal with mashed potatoes. Don't forget the applesauce!
Want something easy, but a little different & very flavorful? Try a baked chicken with salsa, gr peppers, onion and zucchini, which a blend of shredded Mexican cheese on top.
Put the chicken in a baking dish. Throw green pepper strips, thinly sliced onion and slice and cut in quarters zucchine. Then throw your favorite salsa over that. Bake at 350 deg. F. for about 45 mins. Spoon juices over periodically. About 5 mins before taking it out of the oven, sprinkle on some cheese, and take out just after it melts and starts to brown. No seasoning is needed because there's so much flavor in the salsa.
I love a salad with either a mixture of lettuces, or romaine with sharp cheese, red onions, cucumbers, celery, chopped walnuts, etc. with just out of the broiler or off the grill well season chicken, cut up in bite sized pieces. The combination of the cold salad and hot chicken is wonderful. that salad is nice with grill salmon too!
Sometimes, when I make the salad with the chicken, I make it a Thai chicken salad and make a peanut dressing. I had this in a restaurant once and fell in love with it. I'm not good at measurements... just a sense for right amounts, but this will give you an idea of how to make the dressing. It's got a bite to it, but as nippy or as mild as you like:
● canola oil
● rice vinegar
● about 2 tblsps. natural peanut butter
● 1-2 cloves fresh, crushed garlic
● cayenne pepper (careful... hot but it makes the dressing... if possible, try not to leave it out)
● squeeze of lime (or lemon)
● water (pb thickens, so add a little at a time as you mix ingredients well.)
The above can also be the base for a peanut sauce served warm with a Thai dish of some sort.. .like shrimp and steamed vegetables. Heat in a small sauce pan on low heat adding water as needed. The sauce should be a little thicker than the dressing so adjust oil and vinegar accordingly. It's just a little of each for the sauce. A little more for the dressing.
Turkey cutlets. Just season and brown well in a fry pan. Add chopped onion and water. Cover and simmer until done. Remove cutlets and thicken gravy with arrowroot. The gravy is dark and wonderful!

4 boneless pork chops, cut into 3/4-inch cubes
2 teaspoons ground cumin
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
1 teaspoon ground coriander
1 teaspoon ground mace
1/2 teaspoon ground black pepper
1/4 teaspoon salt
1 tablespoon vegetable oil
2 large onions, chopped
3 cloves garlic, crushed
3/4 cup beef broth
3 tablespoons honey
2 tablespoons lemon juice
1 cup plain yogurt
2 tablespoons all-purpose flour
1/4 cup chopped parsley
Hot cooked rice for accompaniment
Chopped cashews for garnish
Chopped fresh cilantro for garnish
Put cumin, cardamom, cinnamon, coriander, mace, pepper and salt in large plastic bag; shake to blend. Add pork pieces, shake gently to coat pork.
Heat oil over medium-high heat in large skillet; cook and stir onions and garlic until tender. Add pork, cook and stir for 2 to 3 minutes or until browned.
Stir in broth, honey and lemon juice, bring to a boil; reduce hat, cover and simmer 10 minutes or until pork is tender.
In small bowl stir together yogurt and flour; stir into skillet with parsley. Cook and stir over medium heat, until mixture thickens.
Spoon pork mixture over hot cooked rice, garnish with chopped cashews and chopped fresh cilantro.
Makes 4 servings.
Anything in a crock pot!
How about... A fish pie using fish, shrimp, a bit of cream cheese sauce, covered in potato and cheese melted on top?
I love a good roast with potatoes, carrots, and onions! I am then able to use the left overs for a casserole...if there are any leftovers.
I love stuffed pork chops with a vegetable side and a great potato!
We also do breakfast for dinner all of the time. I make peanut butter pancakes with grape jelly syrup and bacon and eggs, and toast! YUM!
Good luck getting out of the rut...I get in those all of the time and it seems like we always have the same things week after week after week!

we like to do chinese once a week in my house. Whether it be something with chicken, beef, pork or seafood. Heres a super simple one I like from Betty Crocker
Sweet-and-Sour Pork
1 lb boneless pork loin chops, cut into 1-inch cubes
1 egg, beaten
3/4 cup Original Bisquick mix
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup vegetable oil
1 1/2 cups frozen bell pepper and onion stir-fry (from 1-lb bag)
1 can (8 oz) pineapple chunks, drained
1 jar (11 1/2 oz) sweet-and-sour sauce
1. In medium bowl, toss pork with egg. In 1-gallon resealable food-storage plastic bag, place Bisquick mix, salt and pepper; seal bag and shake to mix. Drain excess egg from pork. Place pork cubes in plastic bag; seal bag and shake to coat.
2. In 12-inch nonstick skillet, heat oil over medium heat. Place pork in single layer in skillet. Cook 6 to 8 minutes, turning occasionally, until brown and crispy on outside and no longer pink in center. Drain on paper towels. Cover to keep warm.
3. Reserve 1 tablespoon oil in skillet; discard any remaining oil. Add bell pepper mix and pineapple; cook over medium-high heat 2 to 3 minutes, stirring frequently, until vegetables are crisp-tender. Stir in sweet-and-sour sauce and pork; heat to boiling.

2 of my favs -- hasbrown/keilbasa casserole and crock-pot chicken n dumplings
1 bag frozen hasbrowns shredded
4 cups shredded cheddar cheese
1 pkg kielbasa - diced
3/4 cup milk
mix hashbrowns/ 2 cups cheese and kielbasa in bowl, place in rectangle pan and top with remaining 2 cups cheese and pour milk over it evenly. bake 350 for 1 hour
Crock-pot chick n dumplings
2 cans cream soups
2 cans water
1 small onion diced
1/2 stick butter
chicken pieces or skinless boneless breast.
set on low and go all day
when you get home turn on high, add can of mixed veggies and for the dumplings use canned biscuits, i cut into 4 and drop in. takes about another 45 min for those to cook and dinners done.
The first would be stuffed peppers. I can actually get my kind to eat these if I use yellow or red peppers. I cook a lot by eye, so I can't give you exact measurements. I use 1 lb. of meatloaf mix, but ground beef would be fine as well. I just find the meatloaf mix to be a little more tender. To this I add 1 cup of cooked rice, a few shakes of worchestire sauce, and an 8 oz of tomato sauce. I generally don't use canned sauce, but the smoothness of it works well in this. And the following, you can use powdered, but I prefer the following sauteed and cooled. 1/2 onion, the tops of the peppers (less the stems of course), a few cloves of garlic with salt & pepper. Mush this all up and add to peppers that you have seeded and deveined. Put this in a baking dish with 1 can of diced tomatoes and about 1/2 c. of chicken stock (pour this mixture on top of the peppers) on 350 for about 1 1/2 hours covered with tin foil. peppers are. The time reallly depends on how big your Baste the peppers about every 15 minutes. Take off the foil paper for the last 15 minutes.
Another good idea would be tacos. Use cruchy corn tortillas instead of flour. If you buy fresh corn tortillas you can fry them up flat and make a type of taco/burrito. Layer the one corn tortilla with refried beans, rice, meat, cheese, and some canned jalepeno peppers. Bake on 400 until the cheese is melty. Then top with lettuce, tomatoes, salsa, olives, etc. Whatever you like. Finish with sour cream and guac. It's easier if you mix the wet and dry ingredients so the top sticks on well. Top with another tortilla and eat like a really messy sandwiches.
An easier version of this is something I make often is a taco salad, now it doesn't look good, but it tastes so good. Again use any type of seasoned meat you like. Generally speaking the seasoning packs with have gluton in them, so check. The key is the hot and cold is delish. Toss up some lettuce tomatoes and olives. Then top with the hot meat and then some cheese. The pour on some sour cream and salsa. Finally crunch in some corn tortill chips. Eat immediately!
Since he can eat rice noodles, how about some Pad Thai? I use this recipe with but I add spicy dried peppers to the mix. I just like mine spicy. http://allrecipes.com/Recipe/Shrimp-Pad-...
I will leave you alone after this. This is basically just augrautin potatoes. Slice potatoes pretty thinly. I use a mandolin. Do the same with onions. You want the onion to almost be translucent. You want them to pretty much dissolve while cooking. Layer this in a buttered pan. Potatoes, salt, pepper, a dusting of flour, a handful of grueyere cheese, and some finely diced ham. Keep on repeating this until you dish is full, end with the potatoes. Pour one can ov evaporated milk on top. Cover with foil paper and bake on 350 for about 1 hour. Take the cover off and layer more cheese and pop back in the oven until the top is lightly.
