I am making carved oranges with pudding inside for a party on friday. If I make them tonight, will they be ok!

I would think that the oranges would get dried up and not look so pretty on Friday, but maybe you can keep them well sealed and in the refrigerator so they will look more fresh. Don't put the pudding in the cups because the pith of the orange is bitter and you don't want that bitterness to go into the pudding.
I am pretty sure they will get watery in two days.
Personally, I would add the pudding as late as possible. The acid in the citrus might sour the milk in the pudding.

Pudding will weep and separate. You could probably carve the oranges ahead of time, though. Just keep them tightly wrapped in plastic.
You could carve the oranges a day ahead , keep them in plastic bags but do not add any pudding until just a short time before serving, just long enough to cool and set. Milk and acid from the oranges will curdle if put together too soon,.
