I place fresh sage and rosemary under the turkey skin also butter. Then I rub butter all over the bird, salt/pepper, a little dried herbs. You MUST try this trick, place a quartered orange in the turkey before baking. I promise the turkey will be more juicy, tender, and flavorful. Bake the bird low & slow and baste often. Or you can soak cheesecloth in butter, place it over the bird, then cover with a little foil. Bake as usual. The turkey does not need basting and comes out a rich brown color.
To keep it moist use a top quality foil for a tent and in the bottom rack of the oven under the turkey pan put a pan of hot water. The water from the lower pan steams the oven up so there is no dry air to dry out the turkey. I've never tried it but I saw the tip on food network.
Creole Turkey Rub
25 whole bay leaves
3 tablespoons Creole seasoning
3 teaspoons dried thyme
3 teaspoons dried oregano
2 teaspoons garlic powder
1 1/2 teaspoons black pepper
Grind bay leaves into a fine powder. Combine all ingredients together. Divide into 3 equal parts. Rub one third on the inside of the turkey, one third over the breasts and one third over the rest of the turkey.
For best results refrigerate the rubbed turkey overnight to allow the flavors to sink in.
OR-
Plain Ole Turkey Rub
1 tablespoon garlic powder
2 teaspoons seasoned salt
1 teaspoons poultry seasoning
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon basil
Combine all ingredients and store in an air tight container. Makes enough rub for a 20 pound turkey
Get a Reynolds Oven bag appropriate for the size turkey you are using. NOTHING in my 40 years renders a better tasting, or juicer turkey than using the bag. Just follow directions on the box for using the bag.
Make sure your turkey is thawed before using.

Honestly, I simply just rub butter all over the outside and salt the skin.
fresh rosemary from the garden, just wash it. Salt pepper. Lift the skin of the turkey and stuff it into it. Also add butter under the skin as well. I just cover my turkey with foil and let alone. Don't pierce it to check for doneness because you'll let out the juices. Instead of stuffing my turkey I add, apples, oranges, walnuts. I also add some liquid to the tukey so i can have extra liquid to make my gravy.
