Guacamole?!! Help!!?!
Answers: I need to make guacamole for like 30 people and i don't want it spicy and i need a good recipe. Please answer anyone
For 30 people, you'll need 10 to 15 avocados, depending on how much they eat, and how large the avocados are, and how many other ingredients you will put in the recipe. Guacamole is usually made by preference for taste and appearance. Here are some suggested amounts below.
10 avocados, skins and pits removed.
2 red or white onions, diced about 1/4"
3 cloves garlic, peeled and pressed or chopped fine
Juice of 4 lemons or 5 limes (buy one or 2 extra just in case you need them)
1 bunch cilantro, washed, stems removed, chopped (optional)
2 cups red ripe tomatoes, diced 1/3" or so
1 tablespoon salt
1 teaspoon black pepper
If the avocados are as ripe as they should be, just put all this in a bowl, and start mashing it with a potato masher, or even the bottom of a sturdy drinking cup or glass that you can grip and use the bottom of as a masher. If the avocados are less ripe and don't mash, chop them fine with a knife, then mix everything together. You can chop the avocados however you want, it just needs to be fine enough so you can pick up the guac with a chip.
Then taste it. Use your judgment. Does it need more citrus juice, salt, pepper? Add and mix again. When you've finished mixing it, use a rubber spatula and scrape it down, and smooth the top flat. Put a piece of plastic wrap directly on the guac, and leave the guac in the frig until you're ready to serve it. Try not to make the guac more than 2 hours before you'll serve it, if you can. No more than 5 hours, please, for best flavor.
Regarding tomatoes: They're out of season now, so I suggest those small grape tomatoes or something similar. Just cut them in quarters. Some people don't like cilantro, so leave it out if you want. Guacamole is traditionally chunky, so I don't recommend making it in a food processor.
When you're making that much and in a hurry, I've used those mixes that the supermaket produce clerks put right next to the avocados... Just follow the instructions and mix in fresh avocados.
no matter how you make it. all recipes are good but first cut the avacados in half brush with olive oil and grill in pan or on grill. then mash the avacado, add some chopped green onion, cilantro ,tomatillo dices tomatoes, garlic,salt and pepper and viola! awesome guacamole.
Costco has a good guacamole in a bag. I prefer to make my fresh. Since you are feeding 30 people you could make two batches, one spicy and one not so. I use fresh ripe avocados and mash them with a fork (you could use a potato masher) until it is still a little chunky. I then add salsa to taste. The salsa has all of the other ingredients you'll need.
This is what I make for my guest.
Mash 4 large soft Avocado. Add 1 tsp of lemon juice immediately to prevent it from going brown.
Add 1 large very finely chopped onion, 2 large finely chopped tomatoes with out the seeds, 3 tbs pf chopped coriander and 1 tsp of ground cumin,
Mix it all together and add salt and pepper to taste.
If you want you can half the mixture and add 1 chopped chilli to one of them if you have any guests who likes a bit of spice.
For this amount of people you can buy large tubs usually in the freezer section to make this much quacamole you would spend close to 100 dollars on avocadoes. It is just best to buy the pre-made stuff and you can always spice it up a little
with some crushed chilles.

15 - 20 Large Avocados
2-3 Lemons, Juiced
6 Ripe Tomatoes, chopped
Garlic Salt
3 - 4 Bundles Green Onions, chopped
Mash the avocados with a fork, add the garlic salt to your liking, add the lemon juice, tomatoes, and green onions and VOILA! Don't forget the tortilla chips....
Easy...... you need about 15 medium size avocados, lightly smash - do not puree - with fork or mashed potato utensil,-- never use food processor-- ....add :-
two cups of chopped onions..... two Tbsp finely minced garlic..... one cup of chopped cilantro.....Five ounces of lime juice.... one ounce lemon juice.... salt to taste, mix gently and garnish with diced red and orange pepper and cilantro leaves .......IMPORTANT... leave about four or five of the avocado seeds in the dip to keep from discoloring. Umm Um...... ENJOY
