Answers: My husband has been away for work for a week and when he comes home tonight I would like to make him a nice dinner to welcome him home.

This is the simplest recipe that you can do anything you like with. Sautee up about 1/2 onion, a few clves of garlic in olive oil salt and pepper. Just let them get soft. To this add 2 cans of diced tomatoes. Let this simmer for about 20 minutes with a little bit more salt and pepper. This is your basic simple sauce.
I basically do four specific things with this basic recipe. All of them are really easy. First, I just toss some angel hair in then some fresh ripped basil and parm cheese.
My next dish has a lot of wow power but basically takes nothing. Only let the sauce simmer for about 15 minutes then add some fresh fish and/or seafood and let it cook. Generally I use halibut, but any firm white fish would do. Also a few shrimp and clams. I add the fish first, let it cook for a little while, just a few minutes, then the clams and as they are beginning to open add the shrimp. Top linguini with the sauce and then arrange the seafood on top of it all. Again fresh ripped basil.
Onther thing I do with this it top the pasta in sauce with a chicken breast that you have pounded about 1/2" thick. Then bread it. First in flour, then in egg, finally in a mixture that's equal parts of parm cheese and seasoned bread crumbs. Sautee this is olive oil on a medium heat about 5 minutes per side. Cut it on the bias, and cover with a little more sauce.
My final dish is chicken sausage that I have sliced and sauteed with sliced onions, peppers and/or mushrooms. Once everything is cooked add a few ladlefuls of the tomato sauce you want it to be really thick. Then hollow out the bottom of a crusty roll. Cut the roll closer to the top than the bottom. Basically you should have a bread bowl. Fill the bowl almost full with the sauce, then add a layer of ricotta cheese and mozz. cheese. Put the top back on and bake at 375 for about 15 minutes. Oh I almost forgot, toast your bread bowls lightly before you add the mixture.

You know your husband best. I myself would make my hubby his favorite meal as a welcome home meal. I would dress it up with a nice table-sitting and candles, and make it a romantic meal. It doesn't have to be a expensive meal for it to be special for him or you. Good luck.

I would make my hubby Home Made Pizza 'cuz that is his favorite. You know your hubby best. What my hunny would love your may not... A Big Juicy Steak w/ Baked Potato w/ sour cream, cheddar, bacon, & chives is always a big hit for a lot of men (& women) or Shrimp Dinners are a hit too.
My husband is out of town at the moment. But when he returns, I'll make a creamy herbed chicken breast dinner in the crock pot. That way we will have time to catch up without the worry of getting dinner on the table.

Does he like fish? You can cook salmon steaks in the oven in about 20 mins. Serve with baby boiled potatoes and your favourite veg. Make up some parsley sauce. Have with a nice bottle of chilled white or rose wine.

Green Papaya Salad

Ingredients:
1 medium raw papaya, peeled, seeded
5 small spring onions with greens
5-6 tender french beans chopped 1" long pieces
1/2 cup raw peanuts coarsely pound or crushed
2 flakes garlic peeled, crushed
1 stalk lemon grass finely chopped
2 fresh red chillies, finely chopped
1 tomato, inner seeds removed, thinly slivered
1 tbsp. soya sauce
1 tsp. sugar
salt to taste
Method:
Either slice papaya into inch long thin wafers, or grate coarsely.
Parboil beans till slightly tender, but not overcooked.
Chop spring onion greens finely, and scallions to thin slivers
Mix all ingredients, tossing with a wooden spatula, to blend well.
Keep covered and refrigerated for 15-20 minutes, before serving.
Serve as a crisp fresh salad, garnish with chilli or onion flowers.
Making time: 20 minutes
Makes: 2-3 servings

Almond Capsicum Stew

Ingredients:
4 large tomatoes ripe, red
1 large capsicum red
1 large capsicum green
1 large onion red or pink
1/4 cup almonds, blanched and peeled
1 tbsp. olive oil
2 tsp. brown sugar
Method:
Place tomatoes in boiling water for 5 minutes.
Peel skin carefully.
Chop tomatoes, capsicums, into big pieces.
Chop onion into strips.
Halve almonds.
Heat oil, add onion, stirfry till tender.
Add almonds, capsicums, cover and cook over med.heat for 3-4 minutes.
Add tomatoes, stir and add brown sugar.
Stir, cover and simmer for 6-7 minutes.
Serve hot, accompanied with salt and pepper and crisp bread.
Variation: Change combination of vegetables if desired. One can add brocolli, cabbage, avocado, asparagus, etc.
Making time: 25 minutes
Makes: 5 servings

Chinese Hot and Sour Onions

Ingredients:
2 large white onions
3 fresh red hot chillies
2 tbsp. oil
1 1/2 tsp. white vinegar
1 1/2 tsp. brown vinegar
3-4 pinches pepper powder
1/4 tsp. sugar
salt to taste
Method:
Peel and halve onions, chop into eight chunks each half.
Slice chillies thin and diagonally.
Heat oil, add chillies and onions, stirfry for 3-4 minutes.
Add all other ingredients, saute further 2 minutes.
Serve hot, with rice or bread.
Making time: 15 minutes
Makes: 2-3 servings
