BEEF NACHOS
1 lb. ground beef
3 tsp. onions, chopped
1/2 tsp. garlic
1/2 tsp. cumin
1/4 tsp. salt
2 lb. Velveeta cheese
1 med. tomato
3 chili peppers
1/4 c. tomato sauce
1/4 c. milk
Chips
Jalapenos
Brown meat. Add onions, garlic, cumin, salt, set aside. Boil peppers and tomato, put in blender on liquid; set aside. Mix cheese, milk, tomato sauce, cook in microwave on HIGH for about 6 minutes, stir every 2 minutes. When done add peppers and tomato, and meat; cook 1 more minute. Serve over tortilla chips. Jalapenos are optional.

1 can cream of chicken soup
1 1/2 c. shredded Cheddar cheese
4 oz. can chopped green chilies
1/2 c. sliced green onions
2/3 c. sour cream
1 c. crushed tortilla chips
2 c. diced, cooked chicken

Combine soup, 1 cup cheese, chilies and onion in medium bowl. Stir in sour cream. Place 1/2 cup chips in bottom of 10x6x2 inch baking dish. top with half of chicken, half of soup mixture. Repeat layers. Sprinkle remaining 1/2 cup of cheese over top. Bake at 350 degrees for 25-30 minutes or until heated through. Sprinkle tortilla chips around edges of dish. Garnish with your choice of chopped tomatoes, sliced green onions and black olives. Serves 4 to 6 people.

8 ounces homemade white corn tortilla chips, fried or baked, recipes follow
1 1/2 cups refried beans, warmed, recipe follows
2 poblano chiles, roasted, peeled, seeded, and diced
2 to 4 canned, pickled jalapeno chiles, stemmed and thinly sliced crosswise
1 cup finely shredded Monterey Jack cheese (about 4 ounce)
1/2 cup sour cream

Preheat the oven to 400 degrees F.
Spread half the chips out in a large shallow casserole dish or on an ovenproof platter. Top with half the beans, in small spoonfuls, and scatter with half the chiles. Repeat with the remaining chips, beans, and chiles. Sprinkle the top of the nachos with the cheese. Bake until heated through and the cheese melts, about 3 to 5 minutes. Top the nachos with dollops of the sour cream and serve.

EASY NACHOS

4-5 cups tortilla chips
1 16-ounce can refried beans
1 cup chile con queso dip
1/4 cup sliced green onions
1/2 cup sour cream
2 cups shredded iceburg lettuce
1/2 tsp freshly chopped cilantro (optional)
1 T hot sauce (optional)

Warm the chile con queso dip and refried beans.
Spread the warm beans out over the chips on a serving platter. Optionally sprinkle hot sauce over the beans.

Pour on the dip, cover with shredded lettuce, a daub of sour cream, and top with green onions and a sprinkle of cilantro

I just sprinkle tortilla chips with shredded mozzarella and cheddar and black beans, serve with salsa

You can put them on tin foil and in the toaster oven or on a plate in the microwave and just heat till melted

Brown and season beef like you would for tacos. Melt Velveta cheese and Rotel salsa together in microwave. Spread your favorite tortilla chips on a platter. Pile on your seasoned ground beef so that it falls through to the bottom chips. Pour on your cheese sauce. Top with shredded lettuce, diced tomatoes, green or white onion and a few sliced jalapenos if you like it spicier. Put a Heaping spoon of sour cream in the center and serve. I like to sprinkle black beans in this as well.

CHICKEN CHILI NACHOS:

4 chicken breasts, boiled and shredded
2-8 oz packages of cheese (cheddar, jack, Colby)
1 or 2 cans spicy chili beans
16 oz. sour cream
1 can of cream of chicken soup
1 can of diced tomatoes with green chilies
1 small can diced chilies or jalapenos
1-2 bags of nacho cheese Doritos

In large pot add sour cream, soup, tomatoes, chilies, and chicken. Let simmer 10-15 minutes. Layer baking dish with smashed Doritos, then pour chicken mixture on top.
Next spread half an 8 oz. package of cheese, then add cans of beans, and top with remainder of cheese.

Bake at 350 degrees for 20-30 minutes until cheese is melted.

Serve with additional Doritos instead of a fork.

you don't say what kind of nachos, there are all kinds! sam's club has a good nacho cheese in a green can like for 5 bucks, you heat that, then pour over tostitos and jalapenoslices (found in the mexican section) on top! \

ULTIMATE NACHOS

1 lb. ground beef
1 packet taco seasoning (whichever brand you prefer)
1 medium can refried beans
1 cup shredded lettuce
1 cup diced fresh tomatoes
sliced ripe olives
shredded cheese
salsa
sour cream
guacamole
white or yellow corn tortilla chips

Crumble and brown ground beef in a large skillet. Drain ground beef and add taco seasoning according to directions. Heat according to package. Set aside. Heat refried beans in the microwave in a microwaveable dish. On a large sided cookie sheet layer tortilla chips, refried beans, ground beef, lettuce, tomatoes, sour cream, guacamole, olives, salsa, and cheese. Or you can layer all ingredients in a dish and set the chips aside for dipping. Great tasting and easy!
