BBQ THICK PORK CHOPS !

Get boneless skinless chicken breast, cook or grill it with a little butter and chili powder, make rica-a-roni 4 cheese rice, dice chicken and mix. i usually make a side salad and some rolls w/ it . . .

Or, get french cut green beans, cream of potato and cream of chicken soup, chicken breast marinated in italian dressing, and some shredded cheese for a good semi-healthy casserole. I just mix everything together w/ the cooked chicken and a 1/4 cup of milk, put a light layer of cheese on top, and bake until the cheese melts.

Im a horrible cook but these are super quick and easy, just have to make sure the chicken is fully cooked and mix stuff.

I am single and just cook for myself so I like to cook a big meal now and then and have leftovers I can heat up for several days. I make roast (pork, beef, and leg of lamb), with all the trimmings, Spaghetti and meat sauce, hash and baked beans, a big pot of beans and cornbread. Things like that. No left overs? I'll grill a steak or a chop and make french fries or a baked potato. Now and then I'll make a chef's salad and have hot rolls with it. Darn, now I'm getting hungry!

We eat spaghetti or pasta on Wednesdays and Sundays. My spouse is from an Italian-American family so that seems normal.
We take turns cooking, so we rely on what's fresh and nice at the market. Sometimes, our butcher has these wonderful sausages, like andouille or chorizo, or he has pork stew on sale. Often, he sells bizon (American Buffalo)!
We make a lot of dishes that are cooked low and slow, with a lot of aromatics, and served over rice. Try the Sierra or Yukon gold potatoes for variety. They are wonderful.
Try Muir Glen tomato sauce with Cabernet wine for an alternative to Ragu. You might have to go to an organic market. It's a great sauce, no added sugar, and needs no other seasoning.
Try the no-bake lasagna recipe on the Barilla lasagna pasta box. (I add layers of baby spinach). It's great.
Try a different nation or ethnic group every week or two. Does your family like fish? Find an excellent fish-monger who will assist you in preparing the fish or shellfish.
Enjoy.

You don't mention my favorite - Alfredo. When you find out how easy it is, you will kick yourself. I usually serve over gnocci.

1 stick of butter (NOT Margerine)
1 pint of Heavy Cream
2 - 3 cloves fresh garlic, chopped
1/2 lb grated parmesan (in the deli section, not the green can)

Melt the butter on medium heat. Add the chopped garlic and stir a few minutes until the garlic releases its flavor. Dump in the heavy cream. This is the only remotely difficult part. You have to stir constantly from this point or else the sauce will boil over and/or scorch. Keep stirring constantly. Try to have music or something to distract you because you will be standing at the stove stirring anywhere from 5 to 10 minutes.

What we are looking for is that magic moment when the water has boiled out of the milk, and its viscosity changes. At that point, remove it from the heat and add the grated parmesean.

Serve over pasta, gnocci, with chicken, shrimp, &tc
