I make a tuna cocktail, like a prawn one but using tuna instead. Personally I don't like tuna cooked twice so don't do hot recipes for it.

It works on pizza too. Make or buy a base and add tuna and whatever toppings you enjoy.

tuna and mayo with a little red onion
on a jacket potato, side salad

very filling

1 cup or rice. Preferably calrose or any suitable for sushi.
2 cups of water
2 cans of tuna
1 large avocado
1 cucumber, seeded and sliced very thin
1 Cream cheese (Philadelphia or similar)
1 teaspoon minced fresh ginger
1 Tablespoon sugar
1 Tablespoon rice or white vinegar
1 pinch of salt
Sesame seeds, toasted.
1/2 cup Japanese soy sauce
1/2 cup Tangerine or orange canned juice.

Prepare the rice by placing the water in a container together with the ginger, sugar and the venegar and bring it to a boil. Add the rice, when the water boils again, cover and reduce the heath to the minimum and let it cook for about 20 mins. Turn the heath off and let the rice rest for 5 mins, covered. Get a container, preferably a round cake mould, the ones that have a central funnel. Sprinkle some of the sesame seeds in the bottom, top with half of the rice and then add, in layers, the tuna (mixed with mayonnaise), avocado, cucumber and cheese slices. Top with the rest of the rice. Press down with your hands to compact, place a wide flat dish on top, turn it around and you'll have a sushi cake. Mix the soy sauce with the juice, adjust the flavour to your taste and serve.

make a tuna spaghetti sauce, i.e instead of using mincemeat as one does to make a bolongese sauce, use tuna. fry onions garlick (optional), mushrooms in olive oil, and add a couple of tins of tomatoes and some tomato puree. salt and pepper and a spoon of sugar. simmer slowly. boil the spagetti and toss in butter... add the sauce and, hey presto, a tasty and nourishing dinner.
