How about a nice recipe for red potatoes that is not mashed or potato salad?!


Question: Cut about 1lb. of potatoes in quarters. then lay them on a cookie sheet. the sprinkle them with Extra Virgin Olive Oil, season with salt and pepper and put them in an oven at 400 degrees. Roast those bad boys!! It's easy! It's quick! It's plain but ooooo soooo good!!

INGREDIENTS
2 pounds small red new potatoes
1/2 cup butter or margarine
1/4 cup chopped fresh parsley
1/4 teaspoon dried marjoram




DIRECTIONS
Cook potatoes in boiling salted water for 15 minutes or until tender. Cool slightly. With a sharp knife, remove one narrow strip of skin around the middle of each potato. In a large skillet, melt butter; add parsley and marjoram. Add the potatoes and stir gently until coated and heated through

leave the skins on and cut into 1 inch pieces. Brown with butter and onions in pan. Add a dash of salt and enjoy

I made these the other night or a dinner party, and everyone loved them.

Roasted Red Potatoes
Cut red potatoes into chunks. Put in a large bowl and drizzle enough olive oil to coat all potatoes. Season with greek seasoning (I use Zeus). Stir potatoes to coat them evenly with oil and seasoning. Pour out into baking dish. Bake in 450 degree oven about 45 minutes or until nice and brown and done.
Potatoes will be crispy on outside and nice and soft inside with a wonderful flavor.

If you dont have greek seasoning you can use any other seasoning blend you like, or even just plain ole salt and pepper.

Here are 2 that are good.

Garlic red potatoes

INGREDIENTS
3 pounds red potatoes, quartered
1/4 cup and 2 tablespoons butter, melted
1 tablespoon minced garlic
1-1/2 teaspoons salt
1-1/2 lemon, juiced
1 tablespoon and 1-1/2 teaspoons grated Parmesan cheese


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place potatoes in an 8x8 inch baking dish.
In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
Bake, covered, in preheated oven for 30 minutes. Uncover and bake an additional 10 minutes, or until golden brown.

Cheese ranch red potatoes

INGREDIENTS
12 small new red potatoes, scrubbed and halved
1-1/2 cups Ranch-style salad dressing
1-1/2 (8 ounce) packages shredded Colby-Monterey Jack cheese
1-1/2 teaspoons freshly ground black pepper


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place potatoes in a large saucepan over medium heat, and cover with water. Bring to a boil, and cook 10 minutes, or until tender; drain.
Place cooked potatoes on an ungreased cookie sheet with the cut side up. Spread a spoonful of dressing on the top of each potato half. Sprinkle with cheese, and lightly dust with pepper.
Bake in the preheated oven for 5 minutes, or until cheese is melted.

Roasted with Rosemary and Olive Oil, YUMMY, you can put sliced almonds with them too, just bake in small casserole pan covered with tin foil

I have been making these potatoes for years, can't remember the name of them though.

Wash and scrub the potatoes. Slice them into rounds 1/4 inch thick. Dice half an onion, the original recipe calls for bacon grease and that is what I have always used but if you don't have that (I save mine every time I cook bacon) you can use olive oil. Pour a generous amount in the frying pan and get it hot. Then add your potatoes, make sure they are dry and then add the onions on the top of the potatoes. Sprinkle with paprika. Let them brown on one side and then turn them. YOu don't want the onions to burn so always put them on the top of the potatoes and then they will cook perfectly in the time it takes for the other sides of the potatoes to cook. When brown, remove to paper towels to drain and pour parmesan cheese generously over the top. Never seen anyone not like them yet. And don't tell the kids they have onions in them, they will never know LOL Mine didn't and asked for them all the time. Happy Cooking

My favorite way is simply boil them, then cut, drizzle with melted butter, sprinkle with lemon pepper and a tiny bit of salt.

RED POTATOES WITH CHEESE AND
BACON

6-8 red small red potatoes
1 stick butter
1 pkg Hormel real bacon pieces
3/4 cup shredded cheddar
garlic salt
freshly ground pepper
salt
olive oil

Preheat oven to 375°F.
Wash potatoes and cut into quarters. Grease bottom and sides of glass baking dish with olive oil.

Place potatoes in a dish and slice stick of butter into 1 tablespoon pats and place on top of potatoes.

Sprinkle with salt, pepper, and garlic salt. Cover with foil and bake until potatoes are tender, about 30 minutes. Remove foil and cover with cheese and bacon pieces.

Place back in oven until cheese is melted, about 5-10 minutes.

sliced and put in a crock pot with boneless skinless chicken breasts.

Wash them and cut into chunks, no need to peel them. Put in a bowl and toss with olive oil, peeled garlic cloves, chopped fresh Rosemary, sliced black olives, salt and pepper, and a few red pepper flakes. Toss to coat. dump onto a sheet pan and roast until tender.
