What can I do with unsweetened carob chips?!


Question: I accidentally purchased unsweetened carob chips (they're like chocolate chips but w/out cocoa and milk). What can I make w/ them? How can I sweeten them?

CAROB RICE BARS

2 c. unsweetened non-diary carob chips
1 c. peanut butter
6-8 c. Rice Krispie dry type cereal (may also use flaked cereals)
1 c. raisins (optional)

May use chopped nuts, coconut or other chopped dried fruit.
Melt carob chips and peanut butter together. Add cereal and raisins or other optional ingredients. Press firmly into 13x9 dish and refrigerate until firm.


HEALTHY CAROB CHIP COOKIES

1/2 c. butter
1/4 c. honey
2 tsp. vanilla
1 c. whole wheat pastry flour
1/2 tsp. baking soda
1/2 c. chopped walnuts
1 c. carob chips

Cream together first 3 ingredients. Sift in next 2 ingredients. Add nuts and carob chips; mix well. Roll in small balls. Place on greased baking sheet. Bake at 350 degrees for 10-12 minutes. Yields 1 dozen.

CAROB CHIP HONEY COOKIES

1 1/4 c. whole wheat flour
1/2 c. honey
1/2 tsp. soda
1 pkg. carob chips
1 c. nuts
3/4 tsp. salt
1 beaten egg
1 tsp. vanilla
1/2 c. butter or oil

Sift flour, salt and soda together. Cream shortening and add vanilla, honey and egg. Add dry ingredients. Mix carob chips and nuts. Beat well. Drop by teaspoonfuls on ungreased cookie sheet. Bake at 375 degrees for about 12 minutes. Makes 30-50 cookies.


CAROB PECAN SQUARES

1 egg, beaten
1/2 c. oil
1/2 c. honey
1 tsp. vanilla
3/4 c. whole wheat flour
1/2 c. broken pecans
1.2 c. carob chips

Combine egg, oil, honey and vanilla. Add flour and mix well. Stir in the pecans and carob chips. Pour mixture into an oiled 8 x 8 inch pan. Bake at 400 degrees for 15 minutes or until light brown and pulls away from sides of pan. Cut into squares. Cool in pan.

CAROB HONEY DROP COOKIES

Ingredients:
1/4 c butter
3/4 c honey*
1 egg
2 c whole wheat pastry flour*
1/2 t sea salt*
2 t baking powder*
2 T milk
1 c. chopped nuts*
1 c. carob chips*

Cream butter, add honey and beaten egg. Beat til fluffy. Mix dry ingredients together with nuts and chips.
Add dry ingredients alternately with milk to creamed mixture. Mix thoroughly. Drop by teaspoonful onto greased baking sheet, 2-3" apart. Bake at 350oF for 12 -15 min. Makes 4 1/2 dozen cookies.
