slice the potatoes, scallions and mushrooms and saute them in a large frying pan.
Beat the eggs and pour over the potatoes etc, cook very gently til the eggs set, layer slices of tomato on the top sprinkle cheese on the top and grill until bubbling.

I'm thinking a simple "hobo omlette" (name I stole from a really great breakfast restaurant from my misspent youth):
Turn on the broiler in your oven.
Take the broccoli, scallions (reserve a little bit of these for your toast), potatoes and mushrooms ... but them fairly small so that they'll cook quickly. Maybe 1/2" cubes. Saute them until the potatoes are soft.
While they're cooking, pop some bread into the toaster. Slice a tomato and shred some cheese, break open enough eggs and scramble them.
When the toast pops, place tomato slices onto it, the reserved scallions, some of the cheese, and put onto a baking sheet. Your broiler will cook this very quickly, so we'll wait to put it in until the last second.
By this time your main ingredients should be ready. Pour your eggs over the sauteed goodies and let cook. Stir infrequently to prevent burning and ensure that all the eggs cook. When about ready, sprinkle the rest of the cheese over the pan.
At this point, put your toast under the broiler. Plate up your eggs ... and get your toast out before it burns.

Scramble the eggs, and mix in cheese, chopped broccoli, chopped scallions.
Shred the potatoes, and fry them as hashed browns, or slice them, and cook them as home fries. Either way, add the sliced mushrooms with they're almost done.
If you julienne the carrots to the size of a pencil lead, which is a pain, you can put them in with the potatoes fairly early. You don't want a LOT of carrots, just enough to color the taters.
Diced tomatoes go well with either the eggs or the taters.
Toast the bread.
You have the makings for a *very* nice breakfast.
Make some Minestrone and than fry the eggs and eat them with the brown bread.

to make put the egg i a bowl and whick it and then heat up a pan and put a tiny bit of oil in it and heat it and then put it on full heat and ut the egg in and then wait for it to go like solid on the bottom like when you make a pancake and then add the chopped mushrooms right at the end and fold it in half and put it on a plate, it shouldn't take long to cook, less than 5 mins
An omelet!
3-4 eggs
1/2 cup cheese
diced carrots
diced tomato
minced scallions
sliced mushroom
hashbrowned potato
Start by sauteing the scallions first then add the potato, carrot, mushrooms, and broccoli continue to saute until scallions are almost translucent and the potato's are soft and light brown then set it a side.
Next mix the egg until the yolk and the whites are as one liquid then pour into pan wait until they create a form bottom then place the sauteed mixture of scallions, potato, carrot, mushrooms, and broccoli. Next, add the Cheese.
Lastly, be careful when you do this fold the omelet in half and let simmer for a few minutes and carefully transfer the cooked omelet to your plate. Garnish with remainder of cheese, a few stalks of broccoli, and a few strains of julienned carrots with bread on the side. Enjoy!
Note: You need enough eggs to cover the entire mixture of stuff.

Saute chopped scallions and crushed garlic (if you have some). Add potato cubes and cook for a few minutes.
Add grated carrots and florets of broccoli, salt, pepper and maybe some mixed herbs or parsley.
Whip up some eggs with a little bit of milk and grated cheese. Transfer all the veggies into a dish, pour the milky eggs over it and mix well. Put some slices of tomato on top of it and bake in the oven on 180 degrees until the eggs are firm.
cut into slices and have it with some toast and keep the rest for lunch or dinner with a lovely salad.
