How do you make batter for fresh fish?!
Answers: I want to batter Spanish Mackerel fillets. I know it involves an egg and bread crumbs but lack the 'how to'.
beat 3 whole eggs together
salt
pepper, onion powder, whatever spices you wish to add
a dash of sugar
whisk the ingredients together in a sizeable bowl so that you can plunge each fillet to coat with the mixture.
place your ingredients as follows from left to right: plate of fillets (at room temperature), egg mixture. bread crumbs. tray for finished, breaded fillets.
ONLY your left hand will be wet with fish and eggs or you will have a big mess on your hands. your right hand will stay DRY (dont let it touch the eggs or fish!).
1. with your left hand, take a fillet and drop it into the egg mixture and slosh it around to coat it.
2. pick it up and lay it flatly onto the bread crumbs wtihout touching bread crumbs.
3. your right hand: dont touch the wet fish and egg. shovel bread crumbs over and around to bury the fillet and press down firmly. keep your right hand dry.
4. wait a few seconds for the bread crumbs to stick to the fish.
5. place onto tray.
6. repeat.
well....crumble the bread so it's really small. dip the fish into egg, bread crumb, egg, bread crumb...and then fry on the stove in about 5 tablespoons vegetable oil. you can also use flour or cornstarch instead of breadcrumbs, but you'll need a sauce of some sort to put on it.
just mix flour+water+salt into a not-too-runny batter. You can add baking powder if you want the batter to rise more while being fried .
