INGREDIENTS
3 egg yolks
1/4 cup white sugar
2 teaspoons vanilla extract
1 1/8 cups mascarpone cheese
24 ladyfingers
1 1/2 cups brewed coffee
1 tablespoon unsweetened cocoa powder



DIRECTIONS
In a medium bowl, beat yolks with sugar and vanilla until smooth and light yellow. Fold mascarpone into yolk mixture. Set aside.
Dip ladyfingers briefly in coffee and arrange 12 of them in the bottom of an 8x8 inch dish. Spread half the mascarpone mixture over the ladyfingers. Repeat with remaining cookies and mascarpone. Cover and chill 1 hour. Sprinkle with cocoa just before serving.

Try recipes.com, allrecipes.com, or epicurious.com to find a tiramisu recipe. The best tiramisu I ever had was a pretty classic recipe, except that instead of ladyfingers, brownie trimmings & thin slices of brownies were used. It rocked my world.

Essential ingredients for a good tiramisu are a good firm zabagione, good quality Italian espresso, crisp lady fingers, and a good marsala. Combine these with patience and care....you will have great results!! Start with this recipe:

Tiramisu
Zabagione:
2 egg yolks
1 oz marsala wine
6 oz sugar (in weight)
4 fl oz water
2 oz corn syup ( in weight)
1 lb mascarpone cheese
1 lb 8 oz heavy cream

In a saucepan, cook the sugar, water and corn syrup together. Bring to a boil and cook for one min. Remove from the heat and let it cool slightly. Over a double boiler, briskly whisk the yolks with the masala until pale yellow and foamy. Slowly drizzle in the syrup mixture. Set aside to cool. In a mixing bowl, whip the mascarpone with the heavy cream until stiff. Once both the egg and cream mixtures are done, combine together. Brew about 2 cups of good strong espresso coffee. Dip the lady fingers in the espresso and cover the bottom of a nice baking dish. ( You wont be baking this, so dont worry) Add a nice layer of the zabagione, and layer again with ladyfingers dipped in espresso. Top with zabagione again, and then place in the fridge for at least 2 hours. Just before serving, dust with cocoa powder.

Chocolate Caramel Tiramisu

395g can Sweetened Condensed Milk
2 TB Brown Sugar
250g Cream Cheese, Chopped
1/3 cup drinking chocolate powder
3/4 cup boiling water
1/2 cup chocolate liqueur
24 sponge finger biscuits

1) Combine condensed milk and brown sugar in a large heatproof bowl. Microwave, uncovered, on High for 3 minutes, whisking every minute until mixture starts to thicken. Microwave on High for 2 to 3 minutes whisking every 30 seconds until a thick caramel forms. refrigerate for 30 minutes or until chilled.
2) Using an electric mixer, beat cream cheese on high speed until creamy. Add caramel and stir to combine. Freeze this mix until thick and semi frozen.
3) Combine 2 tbs chocolate powder and boiling water \, stir till chocolate dissolves. Add Liqueur. Dip 8 biscuits 1 at a time in chocolate. Place side by side on platter to form a rectangle.
4) Spread 1/3 caramel mix evenly over biscuits. Repeat layers twice with biscuits and caramel. Cover and freeze for 4 hours.
Transfer to the fridge 1 hour before serving. Dust with remaining chocolate powder to serve.
