I got something you could deep fry, but you would have to spit it out of your mouth first.

Caviar is a delicacy, it is generally not deep fried, and NEVER eaten with ketchup. Caviar is incredibly expensive, why on earth would you ruin it by deep frying it and adding ketchup?

Caviar is meant to be eaten in its raw state. This is where the flavor is. This is where the most nutrition is.
BUT if you insist on deep frying it, you have to handle it very, very gently.
Its best to use a teaspoon or tablespoon.
1] Take that much from the container.
2] Coat it with flour.
3] Shake off the excess flour.
4] Dip the floured caviar ball into an egg wash. Make sure all the sides are well-covered with the egg and water mixture.
5] Remove the floured and egg washed coated caviar ball and let the excess egg wash drain from the ball.
6] Dredge the ball in plain bread crumbs.
7] Coat all the sides with the bread crumbs.
8] Remove the breaded caviar ball from the bread crumbs and shake off the excess bread crumbs.
9] To increase the possibility of having the caviar ball remain as a caviar ball and not explode in the heated oil, repeat the egg wash and bread crumb procedure. This will give you a double coating of bread crumbs on the caviar ball.
10] Heat vegetable oil to 350 degress F.
If you don't have a candy thermometer or a home edition of a deep fat fryer, make the investment in a candy thermometer with readings between 250 degrees F. to 450 degrees F. OR if Canadians use Celsius, make the investment in that type of candy thermometer with a conversion chart.
11] Gently drop the breaded caviar balls into the heated oil. Cook until golden brown on all sides.
12] Remove to a plate covered with paper towels. These will absorb the excess oil.
13] Serve it with ketchup and lemon wedges.
