Mix two table spoons of PLAIN flour with one egg (or double portions if required). Season. Beat in milk until the consistency of double cream. Leave to stand for a couple of hours (v important) and stir again. Place a yorkshire pudding tin/ bun tin/ muffin tin in the oven (top shelf) with a small amount of fat in each cup(ideally beef dripping or lard, but vegetable oil will do). Leave oil to get very hot. Remove tin from oven and put a small amount of mixture (enough to cover the bottom to the depth of 1-2mm) in each cup. Replace immediately in oven. leave to bake until puddings have risen and are fluffy. DO NOT OPEN THE DOOR OF THE OVEN DURING BAKING.

get some batter mix its the same sort you use for pancakes ,mix the egg and milk and while your doing that pre heat oven and put some oil in your baking tin and put in the oven, wait til its smoking add the mix but back in the oven i think the oven has to be about 220 and 20-30 mins later yorkies

This is Delia's recipe. My wife made some a while ago, really good but you have to stick to the cooking time and temperature for the perfect yorkie pud.

Good Luck!!!

Yorkshire Pudding

After removing meat from the oven, increase oven temperature to 450 degrees F. Measure pan drippings. If necessary, add enough cooking oil to drippings to equal 1/4 cup; return to pan. In a mixing bowl combine 4 eggs and 2 cups milk. Add 2 cups all-purpose flour and 1/4 teaspoon salt. Beat with an electric mixer or rotary beater until smooth. Stir into drippings in roasting pan. Bake for 20 to 25 minutes or until puffy and golden. Cut into 12 squares. Serve at once with roast.
