CHEESY SCALLOPED POTATOES

2 cans Campbell's cheese soup
1/2 c. milk
1/4 tsp. pepper
8 c. thinly sliced potatoes
1 c. thinly sliced onions
2 c. shredded sharp or mild Cheddar cheese
2 tbsp. butter
Paprika for garnish

Combine soup, milk and pepper. In 2 1/2 quart shallow baking dish (13x9x2 inch), arrange alternate layers of potatoes, onions, cheese and soup mixture. Dot top with butter; sprinkle with paprika. Cover; bake at 375 degrees for 1 hour. Uncover; bake 15 minutes more or until done. Makes about 8 cups.

Au Gratin Potatoes

Ingredients:

6-8 potatoes (peeled, boiled, and diced)
1 can cream of chicken soup
1 pt. sour cream
1/2 c. chopped green onions
1/4 c. melted butter
1 tsp. salt
1 1/2 c. shredded sharp cheese

Topping:
1/4 c. melted butter
2 c. crushed, unsweetened corn flakes

Directions:

Mix all but topping, and put in 13"x9" pan. Put topping over this, and bake for 45 minutes in a 350 degree oven.

SCALLOPED POTATOES AU GRATIN

potatoes
onion slices
Wondra flour
butter
salt and pepper
shredded Cheddar cheese
Cream of Mushroom soup
French onion chip dip

Note: Quantities are not specific in this recipe, so vary according to your own taste and feel free to improvise with what you have.

Slice potatoes and arrange in the bottom of an ovenproof casserole or baking dish. Top with onion slices, salt and pepper. Sprinkle with a thin layer of shredded Cheddar cheese.

In a sauce pan, warm 1 can of Cream of Mushroom soup and mix with 1 pint of French onion chip dip. Pour the mixture over potatoes. If soup mixture becomes too thick, add some milk to thin it down.

Sprinkle Wondra flour over the top and add a couple of pats of butter.

Repeat the first step, adding layers until dish is full.

Bake at 350°F in oven for about 90 minutes or until golden brown.

SCALLOPED POTATOES

3 tablespoons butter
1 small onion, minced
3 tablespoons all-purpose flour
1 teaspoon salt
1 1/2 cups milk
1/4 pound sharp cheddar cheese, shredded
5 medium potato, peeled and sliced
1/4 teaspoon paprika

Preheat oven to 375 F. In 2-quart saucepan over medium heat, in hot butter, cook onion until tender, about 5 minutes. Stir in flour and salt until blended; cook 1 minute. Gradually stir in milk and cook, stirring constantly, until mixture thickens slightly. Remove saucepan from hear; stir in 1/4 cup shredded cheese. In shallow 2-quart casserole, arrange half of the potato slices; pour half of the sauce on top; sprinkle with half of remaining cheese; repeat. Sprinkle with paprika. Bake, covered 45 minutes. Uncover and bake 15 minutes longer or until potatoes are tender. Makes 6 accompaniment servings.

Potato Dauphinoise

Ingredients
150ml/5fl oz cream
1 large potato, thinly sliced
1 clove garlic, chopped
1 lemon, zest only
55g/2oz smoked cheese
salt and freshly ground black pepper



Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Heat the cream in a pan until just simmering.
3. Add the potato, garlic and lemon zest.
4. Gently stir through to coat.
5. Sprinkle over the cheese and season.
6. Simmer for two minutes.
7. Put in the oven and bake for 15 minutes.
8. Serve.
