For up to how long can you leave your meat marinating in the fridge?!

However, I think it is not a good idea to over-marinate meat. Delicate meats, like fish, should not be kept in marinade for over 2 hours in most cases. Chicken is fully marinated in about 6 hours. Steaks :over night max. Large roasts, maybe 2 days depending on the size.

The two reasons for marinating meat are for flavor and tenderness. The marinating times mentioned above should take care of these two factors.

I wouldn't leave it for any longer than a day.

I've left beef roasts in the fridge for a full two days without any problem. If it's kept chilled, it's fine. It lets the flavor of the marinade make it all the way to the middle. I turn the roast over in the ziplock bag that's in a pan a couple times per day.

No longer than overnight. But two days will not really hurt it.

you can leave it in up to 36 hrs

It depends I have seen recipes that ask you to start marinating up to 5 days ahead. Usually it is overnight. If the refrigerator is kept at a constant temperature there should not be a problem.

Acording to the Safe Food handlers course, 3 days is the max for any meat to be kept in a fridge.
