Are frozen prawns that have freezer burn o.k to eat?!

Yes, they are perfectly safe. They are edible and nutritious, but they will be a bit dried out and will have a poor texture which some people find unappetizing.

What I usually do with freezer-burned prawns, shrimp, or fish is I make them into a curry, because cooking in a curry sauce rehydrates them and spices them up to where the freezer burn is less noticeable.

Another use for them is cook them in some canned gumbo, or put them into an etoufee or jambalaya recipe. :) The spices in those Cajun dishes are a big help.

Here is the curry recipe:

INGREDIENTS
Coconut cream (see note) 1 cup
Green curry paste 2-3 Tbsp
Coconut milk 3 cups
Fish sauce or light soy sauce 1 Tbsp.
brown sugar 2 Tbsp
Shrimp or prawns: peeled,& deveined 1 lb

Thai holy basil or Italian basil shredded 1/2 cup
Kaffir lime leaves (optional.) 3
Chile pepper, Thai or serrano sliced in thin rounds 2-3

METHOD
Basic Steps: Sauté → Simmer → Garnish

1. In a large saucepan or wok, simmer coconut cream over low heat until moisture boils away and oil separates out. Stir in curry paste and simmer another 2-3 minutes, stirring. Do not allow to burn.
2. Add coconut milk, fish sauce/soy sauce and sugar. Bring to a boil, lower heat, and let simmer 5-10 minutes.
3. Stir in the shrimp/prawns and simmer until just cooked through, 3 to 5 minutes. Adjust seasoning.
4. Stir in the basil and lime leaves. Serve in individual bowls with steamed rice or rice noodles and garnish with the sliced chili pepper.
