How do you cook frog legs?!
Answers: season some butter with garlic and salt and fry them
flour with spices and fried.
I like to parboil them to make sure they cook all the way, then dip them in batter and fry them
wrapp them in foil and bake them.
Season and shallow fry in 50% olive oil and 50% butter.
cut saddles so you have 2 legs pat dry, make seasoned flour with salt and pepper sautee in oil til brown add minced garlic add sherry wine and lemon juice cream with butter, add dash of Tabasco the lemon juice and Tabasco helps break down the muscle to make them tender
Frog Legs Provencal for four
3 pairs of legs per person--more if some have hearty appetites.
1-2 Fresh garlic cloves-minced
Chopped red and green bell pepper to equal 1 cup
2/3 C. Chopped sweet white onion
1/3 C. Chopped celery
12 Finely chopped fresh basil leaves
Ground pepper and salt to taste
2 16 oz. cans of Hunt's petite tomato pieces with juice
Extra virgin olive oil
Worcestershire sauce to taste
Tabasco to taste
1/2 C. Cooked white rice per person
Salt and pepper frog legs and saute' in olive oil until they turn
opaque. Remove and set aside. Saute' chopped vegetables in same pan until onion is clear--do not brown onions or garlic.
Add frog legs back into the pan with tomatoes and juice. Reduce liquid by about 1/3. Adjust seasonings and add Worcestershire and Tabasco to taste.
Serve over rice.
