Make a small hole in each chestnut with the fork or the steam can not escape and they can explode! Pre-heat the oven to 425 degrees. Put the chestnuts on the baking sheet with the hole sides up. Cook for 20 minutes.

Dont forget to prick them with fork otherwise they explode !!!

Well, you don't want to use an overly-high temperature when you're roasting them. I roast seeds and nuts on the stove, so I can turn them as they start to get brown.

I like nuts with a little color, but not burnt. You are roasting them to bring out the flavor of the nut and cook it. They are done when they have released their oils, are fragrant, and have a slight color. It's best to let them cool on a wide dish/plate so they cool quicker. If you will be seasoning them, do it right after they are done roasting.

My friend roasts hers by spredding them on a baking sheet lined with parchment paper or foil (for easy clean-up) and pricks each one. She says 1-2 hours at 250 degrees F, you have to turn them every 1/2 hour or so for more even roasting.

Not sure about the time 20-25 min. You can see the cell its cracked and if you try to squeeze they get soft. Then try one. I roast them in the cell to keep them moist.
