When making my carrot cake from scratch it always fall apart what do i need more of?!
Answers: the cake sticks to the pan and when i slice it it falls apart, cake is good
To my way of thinking, there are two possibilities. Either you need more cake, i.e., you have too many nuts and there isn't enough cake to hold together, or, as the previous answerers said, it is too dry.
You should be able to tell if there are too many nuts when you slice the cake. If that's not the answer, try adding more oil, egg, water/milk, or some applesauce to the recipe. Carrot cake should be a thick, moist cake, not light and airy. (If it's sticking to the pan, it might be the oil that you lack. Also, don't forget to grease and flour your pan, or use parchment paper.)
A lot depends on the recipe you are using and the liquids involved. Have you tried more than one recipe?

you need more liquid. start with an extra egg or 2 and maybe a bit more oil. good luck!
Here's a suggestion to keep it from sticking to the pan. I use Pillsbury's "Baker's Joy". It is a non-stick spray for baking that has flour in it. Spray your pan with it before you pour the batter in. After baking your cake, let it cool on a wire rack about 1/2 hour or until the sides shrink inward a little and away from the edge of the pan.
I usually bake all my cakes in a bundt pan. Once I get the cake out of the pan, it is easy to slice. None of the butchering the first piece out of a square or rectangular pan happening here! ;-)
