Question: What the difference betwwen cake flour, bread flour, and all purpose flour? Can I use all purpose flour for everything? That's what the name implies.

Cake flour has the least gluten, bread flour the most and AP flour is in between. Gluten is what makes dough "elastic". That is what your want for breads made with yeast. It is NOT what you want for tender or flaky pastries, cakes, etc. AP flour is acceptable for most things as the name implies but better results are possible if you use the flour designed for the recipe you are making such as bread flour for bread and cake flour for cakes.

high protien flour is "hard" ie bread flour
low protien flour is "soft" ie cake flour
AP flour is a mix of the two
