Sliced Steaks with Sauerbraten w/ Onion Hash Browns & Spiced Red Cabbage

6 tablespoons extra-virgin olive oil, plus more for the steak, divided
2 tablespoons butter
4 cups frozen shredded hash browns
2 onions, 1 quartered and thinly sliced, 1 chopped
Salt and freshly ground black pepper
1 small or 1/2 large head red cabbage, shredded
2 teaspoons caraway seeds
2 teaspoons paprika
1 fresh bay leaf
1 (2 to 2 1/2-pound) piece London broil (bottom round) steak
2 tablespoons brown sugar
2 tablespoons red wine vinegar
1 cup beef stock
1/4 cup cream
1 cup apple cider or juice
1/4 cup grainy mustard

In a medium skillet over medium heat combine 2 tablespoons oil and 2 tablespoons butter. When butter melts into oil add hash browns and thinly sliced onions, season with salt and pepper. Cook 7 to 8 minutes, turn with spatula and press to crisp, cook 7 to 8 minutes more.

Heat a large skillet with 2 tablespoons oil over medium to medium-high heat. Add cabbage, caraway, paprika, salt and pepper, cook stirring occasionally 2 to 5 minutes, until tender.

While cabbage and potatoes are working, preheat broiler. Heat a small skillet over medium heat with 2 tablespoons oil. Add chopped onions and a bay leaf, salt and pepper, cook 8 minutes until soft and sweet.

Pat meat dry and season with oil, salt and pepper. Broil the meat 10 to 15 minutes, ranging from medium-rare to medium-well doneness, turning once. Rest 5 minutes then thinly slice against the grain.

While meat cooks, add sugar and vinegar to the onions and stir 1 minute. Add beef stock and bring to a bubble. Reduce heat under gravy to low and stir in cream.

Stir the apple cider or juice together with mustard and pour over red cabbage. Stir to combine 1 minute then turn off heat.

Remove bay leaf from gravy. Serve cabbage and hash browns next to sliced steak topped with gravy.

Chicken Quesadillas, Mexican Cheesy Rice & Seven Layer Tex Mex Dip

Chicken Quesadillas

* 1 cup shredded cooked chicken
* 1/2 cup chopped onion
* 1/2 cup shredded mozzarella cheese
* 1/2 cup shredded Cheddar cheese
* 2 (8 inch) flour tortillas
* Ranch salad dressing

In a bowl, combine chicken, onion, mozzarella and cheddar; set aside. Spray one side of each tortilla with nonstick cooking spray. Place tortilla greased side down on hot griddle. Place chicken on half of each tortilla. Fold over and cook over low for 1-2 minutes on each side of until tortilla is golden brown. Cut into wedges. Serve with dressing.

Mexican Cheesy Rice

* 3 cups uncooked instant rice
* 3 cups water
* 1 (10 ounce) can diced tomatoes with green chilies, undrained
* 1 tablespoon chicken bouillon granules
* 3/4 cup sour cream
* 1 1/2 cups shredded Cheddar cheese, divided

In a bowl, combine the rice, water, tomatoes and bouillon; mix well. Pour into a greased 2-qt. microwave-safe dish. Cover and microwave on high for 10 minutes. Stir in the sour cream and 1/2 cup of cheese; mix well. Sprinkle with the remaining cheese. Cover and microwave for 1 minute or until cheese is melted.

Seven Layer Tex Mex Dip

* 1 (16 ounce) container sour cream
* 1 (1.25 ounce) package taco seasoning
* 1 1/2 (16 ounce) cans Refried Beans
* 1 (16 ounce) jar chunky salsa
* 2 cups lettuce, shredded
* 1 large tomato, chopped
* 2 avocados, diced
* 1/2 cup green onions, chopped
* 2 cups shredded cheese
* 1 (4 ounce) can sliced black olives

1. Mix sour cream and taco seasoning. Chill in fridge for 30 minutes.

2. In sauce pan, combine BUSH'S BEST Refried Beans and salsa. Heat on medium until evenly blended. Let cool.

3. Shred lettuce. Dice tomatoes, avocadoes and green onions. Take cooled BUSH'S BEST Refried Beans and salsa and spread in 11x13 inch pan. Spread sour cream/taco seasoning mixture over beans.

4. Layer the cheese, olives, lettuce, tomatoes, avocadoes and green onions in that order evenly over each ingredient. Serve with tortilla chips.

good luck finding a good recipe with 2 sides

rice peas

You can have sweet and sour chicken or pork, with a side of rice and a side of broccoli.

Make some meatloaf as your main dish.
And make some mashed potatoes and buttered corn for your sides : )

roasted chicken, mashed potatoes with gravy and green beans.

Dijon pork chops with (pick one) stuffing, mashed potatoes, noodles w/butter and chives and (pick one) yams, broccoli, steamed carrots, brussels sprouts, etc.

Choose a meat, a theme, a starch and a veg. You could also do something like seasoned steak with garlic bread and salad. Go to town.

REALLY SIMPLE CHICKEN CORDON BLEU

boneless skinless chicken breasts
ham
swiss cheese
your choice of shake 'n bake

This dish is different in that the chicken is not pounded or rolled up. Skinless, boneless chicken breasts are recommended. However many you want or need. Use any type of Shake 'n Bake: Barbecue Glaze, Original, Extra Crispy, or Hot 'n Spicy (recommended).
Heat the oven to 400F°.

Coat the breasts with the Shake 'n Bake, and put them in the oven for 15 minutes. Remove from oven and allow to cool somewhat.

Slice them in half, and add a slice or two of thin ham and a slice of Swiss cheese. Put the other half back on top. Return them to the oven for another 5 minutes or so.

Serve as-is or top them with your favorite gravy or sauce.

BROWN RICE

1 cup white rice
1 stick Blue Bonnet marg or butter
1 can Cambell's Beef Consomme
1 can Cambell's French Onion Soup

Preheat oven to 350°F.
Microwave butter until melted in a covered medium size CorningWare or Pyrex dish.

Next, add both cans of soup and rice. Cover and cook for one hour at 350°F degrees.

Liquid will be asborbed and you'll need to stir before serving.


GREEN BEAN CASSEROLE

30 ounces green beans, canned, drained*
10 3/4 ounces Cream of Mushroom Soup
3/4 cup milk
2 3/4 ounces French-fried onions
1/8 teaspoon pepper

Combine green beans, soup, milk, pepper and 1/2 of the onions; gently stir together to mix well. Spread mixture in a 1 1/2 to 2 quart ovenproof casserole dish.
Bake at 350°F for 25 minutes. Top with remaining onions. Bake 5 minutes more.

Note: *May substitute 18 ounces frozen cut green beans, thawed and drained

Meatloaf:

1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard


Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.

Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Potatoes:

3 large Idaho potatoes
1/4 cup (1/2 stick) butter
1 cup cottage cheese
1/2 onion, diced
Salt and pepper
Paprika

Preheat the oven to 350 degrees F.
Scrub the potatoes, slice them, and put in a pot with water to cover. Boil the potatoes until tender, then drain and mash them with 2 tablespoons of the butter. Add the cottage cheese, onion, and salt and pepper to taste. Stir the mixture gently, and then put in a greased casserole. Dot with the remaining 2 tablespoons of butter and sprinkle with paprika. Bake, uncovered, for 30 minutes.

Okra and Tomatoes

4 slices bacon, diced into small pieces
1 small onion, peeled and chopped
2 cloves garlic, minced
2 (15-ounce) cans diced tomatoes
1 tablespoon chicken base
1 tablespoon sugar
2 cups fresh okra, cut into 1-inch pieces (may use frozen, if fresh not available)
Fresh ground black pepper

Cook bacon slightly. Saute onion and garlic with bacon until tender. Add tomatoes, chicken base, sugar and pepper. Stir well and let simmer for about 20 minutes. Adjust seasoning if needed. Meanwhile wash okra and remove fuzz if using fresh and cut into pieces. Add the okra and simmer until okra is done, about 20 more minutes (less if using frozen okra.)

I like to buy frozen mesquite or terriyaki chicken, put 1/2 piece of swiss cheese on top and then a slice of pineapple on top of that. Bake on 350 for about 20 minutes. Then I make mashed potatoes and corn with butter, salt and pepper. It's cheap, easy, really good and quick. Yum!
