What is a good substitute for Ricotta cheese?!

YUCK... I hate ricotta and cottage cheese. You absolutely don't need it to make lasagna!!

Use really nice freshly SHREDDED mozzarella and parmesan in one layer. Stir in some italian breadcrumbs and beaten eggs to your cheese mixture.

I like to add a layer of roasted red peppers. You can buy a big jar of whole roasted red peppers and lay them out flat on top of your noodles.

Add a layer of meat. With the roasted peppers, I prefer to use a pepperoni or salami instead of beef. It gives it a whole new character and gives it some zing!

This is what I use and everyone loves my lasagna.

Cottage cheese is the best substitute for ricotta cheese. But, if you hate both of those, try using sour cream. It won't be the same, but should taste fine.

Or, if you want, use tofu, mixed like this:
1 pound firm tofu
1/3 cup olive oil
1/2 tsp ground nutmeg
1/2 tsp seasoned salt or rock salt

Combine 3/4 of the tofu with everything else and mash smooth, or use a food processor. Mash in remaining tofu with a spoon to give the right texture.

I don't like the chunky -ness of cottage or ricotta so have found fat free ricotta in the grocery store, I get the flavor of ricotta without all the chunks. It is smooth like sour cream and bakes into lasagna without leaving white (yucky) areas.

Just use Mozzarella
