Whats a good way to cook a sweet potato?!


Question: I usually don't eat them much, so as a result I don't know how to prepare them! I'm a vegetarian and tryint to figure out something for dinner that involves the potatoe...

Yes, you can bake them, pierce them with a fork and bake at 400 degrees for one hour, peel and serve the way you like them
I use butter (organic if you want) a little cinnamon and cloves

BAKED SWEET POTATOES

1 c. pineapple juice
Dash cinnamon
Dash nutmeg
2 sticks butter

This recipe is for a large quantity, 5 pounds sweet potatoes rinsed, put in large pan and cover with water. Boil gently until skins are tender. Remove from water, cool, peel, slice into baking dish.
Make syrup of 2 pound box brown sugar and the above ingredients. Boil syrup about 5 minutes, then pour over sliced potatoes in dish and bake until bubbly and browned about 20 minutes in a 350 degree oven.

BAKED SWEET POTATOES

6 large sweet potatoes
1/2 cup Splenda
1 quart orange juice
2 tablespoons cinammon
2 tablespoons nutmeg
1/4 tablespoon vanilla
1 stick sweet butter


Boil sweet potatoes, drain and cool. Peel off jackets and slice lengthwise.
Place in 2 layers in a oven safe casserole or all purpose aluminum pan. Sprinkle 1/2 Splenda on each layer. Place orange juice and butter in a 2 quart sauce pan.

Heat at medium and add cinnamon and nutmeg and vanilla. Stir until it reaches a soft boil.

Reduce heat and let simmer for five minutes. Pour over sweet potatoes.

Cover pan and bake for 50-60 minutes at 350 degrees. Uncover and bake for extra five minutes to brown top.

SWEET POTATO BREAD

2 c. flour
1/3 c. sugar
1/3 c. dark brown sugar, firmly packed
1 tbsp. baking powder
1 tsp. salt
1/4 tsp. ground allspice
2 eggs, beaten
1 c. mashed, cooked sweet potatoes
1/2 c. milk
3 tbsp. salad oil
1/2 c. chopped pecans
6 pecan halves (opt.)
1 egg white, beaten (opt.)

Stir together flour, sugars, baking powder, salt and allspice. Blend together eggs, sweet potatoes, milk and oil. Stir in chopped pecans, then add all at once to flour mixture, stirring until blended. Pour into greased 4 1/2 x 8 1/2 inch loaf pan.
Bake in 350 degree oven for 1 hour and 10 minutes. If desired, dip pecan halves into beaten egg white and place on top of loaf for last 10 minutes of baking. Cool on wire rack 10 minutes before removing from pan; cool completely before slicing.

Absolutely best way to cook a sweet potato is to roast/bake one in the oven. The heat makes the sugar carmelize a bit and the skin sometimes pops. When it's done and you split it open, it's amazing - the smell and taste. add a little butter and maybe a dash of cinammon and you're in heaven.

you mash it up then you put in the oven for about 20 minutes, then you stir it and you can put marshmallows on it.

Sweet Potato Souffle... can't be beat...

4 cups mashed sweet potatoes
1 cup sugar
2 eggs
1/2 cup milk
1/2 tsp. salt
1/3 stick butter or margarine (melted)
1 tsp. vanilla

Mix well
Pour into buttered pan



Topping: 1 cup brown sugar
1/2 cup flour
1/3 cup butter or margarine (melted)
1 cup pecans

Crumble topping evenly over potato mixture. Bake at 350° for 35-45 minutes uncovered.
