Tuna steaks....?!


Question: i am cooking tuna steaks for my food c.w and i was wondering if anyone new of a website or could tell me a reasonably easy method to get the steaks if i brought the whole fish?

You would have to loin out the tuna, there are 4 sections to a fish, a 35 lb tuna would give you alot of portions, cut laterally down the middle, follow the lateral line, then do the same at the top of the fish, start at the top where the head was. follow the bones, go slow and easy and you will end up with a quarter loin of the fish, it really is not hard but not easy unless you have some sort of knife experience

Marinated Tuna Steaks

The marinade gives them a lovely flavor. Marinating time not included.

4 (6 ounce) tuna steaks, 1 inch thick
1/4 cup soy sauce
1/4 cup dry sherry
1 tablespoon lemon juice
1 teaspoon lemon zest
1 crushed garlic clove
3 tablespoons olive oil
ground black pepper

Mix together: soy, sherry, lemon juice, zest, garlic and olive oil.
Marinate the steaks in this for up to 1 hour, turning frequently.
When ready to cook, lift from the marinade and sprinkle with black pepper.
Heat a grill pan or a frying pan (not using any oil or butter) until really hot and sear the steaks for several minutes on both sides to your likeness but do not over-cook them.
Or cook them on the barbque.

Grilled Tuna Steaks

2 tablespoons olive oil
1/2 teaspoon minced garlic
1 tablespoon minced roasted red peppers
1 fresh jalapeno pepper, seeds removed and minced
limes, juice and zest of
1/4 teaspoon ground cumin
1/2 teaspoon minced fresh cilantro
fresh ground black pepper, to taste
1 (8 ounce) fresh center cut tuna steaks

In a large bowl, combine the olive oil, garlic, roasted red bell pepper, minced jalapeno pepper, zest and juice from lime, cumin, cilantro and freshly ground black pepper.
Pour mixture into a shallow dish and add tuna steaks.
Cover with foil and marinate in the refrigerator for 1 hour.
Place tuna steaks on a well oiled grill rack and cook over a medium heated grill, approximately 7 to 8 minutes each side.

Whaaaaaat? Have you ever seen a whole tuna?

first tunas' are huge fish!I've seen experienced chefs tackle the job and its not an easy one pay the extra fee and get your fish monger to do the dirty work!

I don't think you want to buy a whole tuna!!!

make a maranade for it
you could use lemon juice vinigar garlics ect

grill on each side for about 4-7 min

Pan-fried tuna steak with sauteed yam

Serves 1



Preparation time less than 30 mins

Cooking time less than 10 mins







Ingredients
drizzle of olive oil
1 tuna steak
salt and freshly ground black pepper
For the yam
1/3 yam, peeled and diced
1-2 tbsp olive oil
2 spring onions, diced
salt and freshly ground black pepper



Method
1. For the yam, bring a pan of water to the boil and cook the yam for 6-8 minutes, or until tender. Drain.
2. Heat the oil in a pan and sauté the yam with the spring onions and seasoning for 4-5 minutes.
3. For the tuna, heat the oil in a non-stick frying pan and pan-fry the tuna, seasoning on both sides, for 1-2 minutes on each side, or according to personal taste.
4. Serve the tuna alongside the sautéed yam.

I hope you have a very big kitchen or a very big bank balance, if not both, tuna`s are huge and they cost about £3 for one steak. They don`t need much cooking, just a few minutes either side in a hot griddle pan, if you cook them too long you will be able to sole your shoes with them.

The whole fish? Have you seen a whole Tuna? It is the size of a small dolphin. I hope you have a big freezer.

Best stick with steaks from your fishmonger.
