Sweet Potatoe & Italian Sausage?!


Question: My friend made me some sweet potato dish which had lots of red bellpepper and italian sausage in it! I believe this was a rachel ray recipe from one of her magazines.

I would like to cook this dish on wednesday but we can not find the recipe anywhere! Does anyone know this recipe?

Sweet Potato and Sausage Hash

*2 large sweet potatoes (about 2 pounds),
peeled and cut into 1/2-inch pieces
*1/2 pound bulk pork sausage
*2 tablespoons vegetable oil
*2 bell peppers (any color), chopped
*1 onion, chopped
*2 cloves garlic, thinly sliced
*2 teaspoons ground cumin
*Salt and pepper
*Green salsa, for serving (I think red salsa is even better!)


1. In a medium pot of boiling, salted water, cook the sweet potatoes until almost tender, about 4 minutes. Drain and set aside.
2. In a large nonstick skillet, cook the sausage over medium heat until browned and crumbly, about 10 minutes; transfer with a slotted spoon to paper towels to drain.
3. Heat the oil in the skillet over medium-high heat. Add the bell peppers, onion and garlic and cook until softened, about 5 minutes. Add the sausage, cumin and sweet potatoes and cook for 5 minutes more. Season to taste with salt and pepper and serve with green salsa.

Sausage and Peppers

1 red onion, minced
2 red peppers, roasted and cut 1/2-inch slices
2 yellow peppers, roasted and cut 1/2-inch slices
1 dried ancho chile
Salt and pepper, to taste
2 cloves garlic, minced
8 fresh basil leaves, torn
1 teaspoon fresh oregano, minced
2 pounds sweet Italian sausage
2 cups dry red wine
28-ounce can whole San Marzano tomatoes, crushed by hand

Saute onions, peppers and chile in olive oil until onions are brown. Add salt and pepper to taste. Stir in garlic and basil. Add oregano. Hold aside.

Prick sausage all over with a fork. Saute in skillet over medium heat until brown. Add enough wine to cover about 2/3 of the sausage. Add Sauteed vegetables, tomatoes and any liquid. Simmer gently, partially covered, for 20 minutes. Remove sausage and slice into 1-inch pieces. Can be served on pasta or with bread.

Best Ever Sausage with Peppers, Onions, and Beer!

INGREDIENTS
3 tablespoons olive oil
3 pounds Italian sausage links
3 red bell peppers, sliced
2 green bell peppers, sliced
2 large red onions, sliced
3 cloves garlic, chopped
2 (12 fluid ounce) bottles beer
1 (6 ounce) can tomato paste
3 tablespoons chopped fresh oregano
3 tablespoons chopped fresh cilantro
2 tablespoons hot sauce
salt and pepper to taste

DIRECTIONS
Heat olive oil in a large heavy skillet over medium high heat. Cook sausage until browned on all sides. Remove sausage from pan, and set aside. Pour in 1 bottle of beer to deglaze the pan, scraping up any blackened bits from the bottom. Place the red peppers, green peppers, onions and garlic in the pan. Stir in the remaining beer and the tomato paste. Season with oregano, cilantro, hot sauce, salt and pepper. Cover, and simmer until onions and peppers are tender. Slice the sausages into bite size pieces, and add to the peppers. Cover, and simmer until sausage is cooked through.
