Left over chicken?!
Had a whole roast bird on Sunday for dinner, but there is such a lot left over. Kept it in the fridge over night.

My wife takes all of the meat from the bones and uses it to make chicken salad. I take my lunch to work, usually sandwiches and this is a welcome change from lunchmeat.

I'd make Chicken Pot Pie or some stir-fry. Yummy! You could also have chicken tacos or burritos/enchiladas, or make soup.
You could make soup, enchiladas. cheesy orzo, (saute onions and garlic then boil 2 cans chicken broth and add two cups orzo. Reduce to simmer and put a lid on it. Cook about 20 minutes (just like rice). Add 1/2 cup parmasan cheese, your leftover chicken and broccoli.
You could also make panini sadwiches, or tacos - just warm the meat in a pan add water or chicken broth and some taco type seasonings.
Buy a pre-made pizza crust, some sauce & cheese, and have a chicken pizza!

Chicken tacos, chicken pizza or chicken casseroles.
I would make a nice hearty chicken soup. you could even (if you start in the morning put it in a stock pot.
De bone and skin and chop leftover chicken
32 oz Chicken stock
2 cups sliced carrots
1 cup chopped celery
1/2 onion chopped
2 large potatoes diced
salt to taste
Pour chicken stock into pot, Put all the ingredients listed above into the pot, bring to a boil, reduce heat and simmer for about an hour stirring occasionally.
If stock pot, put all ingredients above into the pot set on low. cook for about 6 to 8 hours.
want noodles!!! Last 15 minutes before serving on stove top method add about 6 oz approx 1/2 bag egg noodles. crock-1 hour before serving.
Debone the chicken and slice/dice the meat.
Get some mixed vegetables (or dice your own carrots, get some corn kernels and seetpeas/plain peas)
Use the above leftover chiicken and the mixed vegtables to
1) fry rice or vermicelli..
2) use the same and cook a semi dry curry. Eat it with chappati, roti canai or bread.

chicken fried rice
cook some rice (rinse it under running water first) and then let it cool (this is important to let it cool).
finely chop and onion, some carrot - get some peas and some corn.
grab an egg and whisk it up a bit
chop some garlic, grate some fresh ginger (teaspoon)
frying pan - oil - fry the garlic, ginger, oinion, carrot for 5 mins (gently) - add chicken and heat through - add corn and peas and heat. season with salt and pepper (from a mill - lots of it) - remove from the pan.
then add some more oil - turn the heat up and add the egg - mix it around until it's broken up scrambled like. remove.
add more oil - turn the heat up - add rice and stir around till it's all coated etc - add the chicken/vege mix and stir around then add the egg and stir again (keep the gas right up). add a drop of sesame oil (tiny bit). lots more milled black peppper.
can be spiced up by adding a chopped chilli with the onion). or some tabasco.
DO NOT add SOY SAUCE while frying - add this after.
serve in bowls and i prefer with a spoon rather than chopsticks.

Maw Maw's Chicken Pot Pie
3 C. chopped chicken
1 C. mixed vegetables, drained
1 can cream chicken soup
1 1/2 C. chicken broth
2 T cornstarch
1 1/2 C. self rising flour
1 C. buttermilk
1/2 C. melted butter
Place chopped chicken and mixed vegetables in lightly greased 13 X9 pan.
Combine soup, broth, and cornstarch... pour over chicken
Whisk flour, buttermilk, and butter.... pour batter over chicken mixture.
Bake at 400 for 40 min. or until golden brown.
CHICKEN POT PIE
1 cup cooked chicken
10 ounces mixed vegetables-I used onions, carrots, celery, and peas
1 small potato, cooked & diced
2 tablespoons butter
2 tablespoons flour
2 tablespoons corn starch-not needed but makes the broth thicker
2 cups chicken broth
Pillsbury Grands rolls
Salt and pepper to taste
Melt butter in a medium size saucepan. Add flour and cook over medium heat, about five minutes. Add chicken broth and cornstarch and heat until mixture just begins to boil. Reduce heat; add chicken, potato and mixed vegetables until heated through. Pour into a 2 quart casserole dish.
Put a top on this using the unbaked rolls. Cover with aluminum foil.
Bake at 400 F. for 30 minutes or until golden.
Serving Size: 4
Chicken sandwiches.
