Don't get intimidated by fancy names, these are pretty simple recipes that I find pleasing to most audiences:

Caribbean Clam Chowder
Pumpkin Black Bean Soup
Black Bean Soup - zesty orange and smoky chipotle peppers make this a stand-out soup
Spicy Asian Chicken soup
Black-eyed Pea stew

Asian flank steak
Chicken Cherry wraps
Chicken Mole (super simple - six ingredients, no chopping - but full of flavor)

Spring rain salad - this serves a crowd, keeps well, and is easily customized for different tastes and allergies.

Having dressings and sauces on hand make salads quick and easy not to mention they encourage kids to eat vegetables... These are a few quick favorites of mine:
Lime vinaigrette
Balsamic vinaigrette
Red wine vinaigrette
Cilantro vinaigrette
Spicy black bean dip
Tomato black bean salsa

Pita chips are also a super simple side dish to make that can be modified day by day (cinnamon-sugar one day, smoky cumin/pepper another, simple salt and pepper)

Homemade applesauce is a wonderful side dish and given a bit of help in the kitchen is simple to make. Other sides I find successful are:
Marinated cucumbers
Moroccan carrots
Red cabbage and apple salad (cabbage is super healthy but difficult to get kids to eat... the sweet flavor in this dish will fool the kids without ruining the health benefits)
Roasted root vegetables with fresh herbs - I keep coming back to this dish because its delicious, healthy, cheap, easy to change, and serves a crowd.

Fritatta. - Chop 1 onion and fry with 1 clove of crushed garlic. Add diced carrots. zuchinni, mushrooms and cook unti the veggies are tender.
Whip 6 eggs with a bit of milk. Add slat and pepper and 1 tsp of mixed herbs.
Mix everything together and bake in the oven until the eggs set. serve with salad and bread. It is yummy hot or cold.

Use any veggies that you like.

LEMON RICE

Lemon rice is good for health and preparation time is only 10 Minites.Cooking oil required only 2 Spoons.

Required items:
1.Rice -500 gm
2.Lemon -2 nos (big size)
3.Red Chillies-4 nos
4.Chenna ki dal -10gm
5.Curry leaves-1 small Bunch
6.Turmeric Powder- 1/2 spoon
7.Salt for Taste.
8.Cooking oil - 2 spoon
9.Musturd- 1 spoon

Method

I Stage:Cook rice for 5 minites ( 1 whistle in cooker is enough). Keep separately for cooling for 5 minites,

II Stage; Heat Oil and add Mustured when spurtled add curry leaves, Turmeric Powder ( if you want colour otherwise not necessary) Add all this in Cooked Rice and mixed with spoon properly.

This Lemon Rice good/Light/Good for Travlelling and good for Stomach( for Digestion)
