Anyone know of or know where to find a Steak Chili recipe with Adobo Sauce?!


Question: I found a recipe last January-ish for a steak chili. It was excellent chili and stupidly I did not frame and lock the recipe in a safe! We moved in April, and I believe I have lost the recipe. Now, I cannot find anything similar to what I remember it being like online. The one odd ingredient I remember was chilis in Adobo sauce. I had never heard of this before, that is why I remember it. Any similar recipes are welcome also :) I also remember it have fresh chilis and lots of beans in it. Thanks everyone!

Chipotle Steak Chili

1 1/2 lbs beef shoulder top boneless blade steaks or flat iron steaks (I use top sirloin)
1 tablespoon canola oil
2 cups chopped onions
1 cup chopped green sweet peppers
4 garlic cloves, minced
2 (15 ounce) cans kidney beans or pinto beans or black beans, rinsed and drained (I mixed kidney and pintos)
1-2 teaspoon chopped chipotle chiles in adobo
1 (15 ounce) can tomato sauce
1 (15 ounce) can diced tomatoes, undrained
1/2 cup water, drained (HA! Fooled ya! Don't drain. ,o)
4 tablespoons chili powder
1 teaspoon dried basil, crushed
1/2 teaspoon black pepper
shredded cheddar cheese (optional)
sour cream (optional)
chopped onions (optional) or scallions (optional)
avocados, slices (optional)

Cut beef into ?” cubes.

In a 4-quart Dutch oven, brown meat, half at a time, in 1 tablespoon hot cooking oil.

Remove meat, reserving drippings in pan.

Cook onion, sweet pepper and garlic in drippings until tender; drain fat.

Return meat to Dutch oven.
Stir in chipotle chili peppers in adobo sauce.

Stir in beans, tomatoes, tomato sauce, water, chili powder, basil and black pepper.

Bring to boiling; reduce heat.

Simmer, covered, about 1 hour or until the meat is tender.

RIB STEAK WITH ADOBO RUB, CHIMICHURRI AND SWEET PLANTAINS

INGREDIENTS

? 4 boneless rib steaks

Adobo rub:
? 2 tablespoons each of ground ginger, garlic powder, onion powder, ground cumin, dark brown sugar, paprika, ancho chili powder and ground black pepper
? Kosher salt
? Olive oil

Chimichurri:
? 1/2 cup olive oil
? 3 tablespoons white vinegar
? 2 jalapeno peppers, seeded and diced
? 1 small bunch flat leaf parsley, picked and chopped
? 3 tablespoons chopped cilantro
? 1 clove fresh garlic, finely chopped
? 1 bay leaf
? Sea salt
? 2 ripe sweet plantains, the dark skin indicates ripeness and sweetness

DIRECTIONS

Prepare the adobo rub by combining all the ingredients in a large bowl or on a platter. Dip each rib steak in the adobo rub and coat both sides evenly, allowing marinating at least one hour before cooking. Keep refrigerated till needed. The rib steak may be grilled or pan roasted for maximum flavor.

Combine all the chimichurri ingredients in a large bowl, mix well and set aside. Make the chimichurri well before cooking. It may be prepared 3 days in advance and kept refrigerated for up to a week.

Peel the plantains and slice horizontally into thin slices. Sauté the slices in hot oil at the final moments before cooking the steaks and serve with the finished rib steaks.

To cook the rib steaks: Preheat a skillet over medium heat for a minute before adding 1 tablespoon of olive oil. Season the adobo-coated rib steak with kosher salt and sear the first side for 3-4 minutes before turning to cook the second side. Cook till desired doneness. Grill outside using standard procedure. Allow the finished steaks to rest before serving.

Serve by slicing the steaks into thin slices, place on a platter with fried plantains and drizzle chimichurri sauce over the beef. Serve slices of tomato, onion and watercress as a side dish, if desired.
