For those who make Jambalaya...?!


Question: I've been doing it for almost 3 years now. Lately, I've left the shrimp out because my girlfriend is allergic. :^(
I put in 1/2 pound of bacon just to see how it'd turn out. Does anyone else use bacon in their Jambalaya? Here's what I put in:

Sausage
boneless chicken
Green pepper
Onion
garlic
1 can tomato sauce
1 can tomato paste
thyme
black pepper
other assorted seasonings to taste

Sorry for lack of exact measurements - this is from memory. Is there anything you'd add or take out? Thanks!

Never put bacon in mine. Your jambalaya would not fly in south Louisiana with all that tomato in it. MIne has:

onions
celery
garlic
red & green bellpepper (for color)
chicken on the bone (adds flavor)
pork chop on the bone
smoked pork sausge
rice
chicken stock
Tony Chachere's Creole Seasoning
salt, pepper

I don't think you need the bacon. The sausage and the chicken should be fine! Don't forget some hot sauce!!

Jambalaya by definition can have all those ingrediants in it you state...and a whole bunch more. Your known by the Jambalaya you keep.

I've sometimes used bacon. I'll dice it, fry it till crisp then saute the onion, garlic and peppers in it for a bit before adding the remaining ingredients.
Bare in mind that jambalaya is not an exact science. It's a dish that can be personalized to your taste. I sometimes make it with kielbasa, shrimp and chicken--sometimes with just one or two of them.
