Kielbasa sausage...Good Eatings?!


Question: Anyone have a nice recipe for polish kielbasa...I made it with some tortellini the other night and it wasn't half bad. A GOOD recipe would be very welcome though! Thanks!

My kids & husband LOVE it when I make sweet and sour kielbasa over rice. I just look online for my favorite homemade sweet and sour recipe, normally pineapple, pineapple juice, soy sauce and corn starch added to sauteed kielbasa and onion. Then we eat it over rice. It's soooooo easy, quick and really yummers. Bon apetite!

I like it boiled with cabbage in some chicken stock. Its also good cut up in mac and cheese. 15 bean soup uses kielbasa also and is great. The recipe is on the package of dried beans ( 15 bean soup mix?)

Kielbasa With Cabbage

1/2 head of cabbage, coarsely sliced
1 medium potato, diced
1 teaspoon salt
1/2 teaspoons caraway seeds, if desired
1 large onion, halved and thinly sliced
1 1/2 to 2 pounds Polish sausage, cut into 1" pieces
1 can (14oz) chicken broth (1 1/2 cups)

Combine all ingredients in slow cooker/Crock Pot, mixing well. Cover and cook on low for 8 to 10 hours, or high for 3 to 4 hours.
Serves 4 to 6.


Kielbasa 'Hash' One Skillet Dinner

2 to 3 tbsp. oil
1-1/2 to 2 onion, sliced thinly
3 md. potatoes, cut in half lengthwise,then sliced thinly
1 to 2 red bell pepper, sliced
6 cloves garlic, minced
1 lb. kielbasa, thinly sliced (polish sausage)
Salt
Pepper
1/2 to 3/4 tsp. McCormick Grill Mates McCormick's Montreal Brand steak seasoning, to taste


In a large skillet, heat oil. Add onions and potatoes, saute over medium heat until onions are soft and starting to brown, about 10-15 minutes or so. Add red peppers and garlic, saute for about 5 more minutes. Add sausage and cook for about 5 more minutes, or until peppers are done to your liking. Add salt, pepper, and McCormick seasoning to taste, along with any other spices you might like.

Kielbasa, onions, sliced potatoes, red bell pepper and garlic, all sauteed till crispy. So good! I served it like a hash, with eggs on the side. Very easy, and done all in one large pan. Feel free to add whatever spices or heat you may like. Makes a great dinner or breakfast.

Serve this kielbasa with potatoes or macaroni, or as an appetizer.
INGREDIENTS:

* 1 cup packed brown sugar
* 1/4 cup spicy mustard
* 1/4 cup finely chopped onion
* 2 pounds kielbasa or smoked Polish sausage, cut into 1/2-inch pieces - actually, I like a Spanish sausage called chorizo better - and even better - if you can find it a Portuguese sausage called linguica - I used it all of the time when I lived and worked in Brazil.


PREPARATION:
In crockpot, combine brown sugar, mustard and onion; add kielbasa (or chorizo or linguica) and stir well to coat evenly. Cover and cook on LOW for 2 1/2 to 3 hours, stirring occasionally.
Gaye's Note: Good as an appetizer, or serve with potato or macaroni salad, fresh veggies and fruit.

try find one with low sodium...some can be VERY salty and nasty tasting
